Any interesting veggie meals?

Looking to expand my veggie menu ability! So looking for veggie meals that don't use a meat substitute, with fairly 'normal' / cheaper veg. Any and all ideas/ recipes welcome! :)

I roast cubes of pumpkin with chopped red onion, olive oil and thyme. Can then be tossed with pasta and sprinkled with parmesan, stirred though risotto with some goat's cheese, or as a pizza topping.

Agree with, 'Plenty.' There is a recipe in there for tofu cooked in a shedload of black pepper and it is absolutely incredible.

Forgot to add that the leftover sauce keeps really well in the fridge and that I use it on top of everything as a low calorie sauce. I really love it with eggs!

When I was a vegetarian, one of my favourite meals was, rice and cheese enchiladas, however to make them more nutritious you could also add refried beans.

A homemade enchilada sauce that I like is, take some passata, tomato puree, add water (most of your sauce should be water, the tomato is there for flavouring, it's not a tomato based sauce), then add cumin, veggie stock cube, chilli powder, paprika (I like smoked, you can use sweet), oregano, pepper, salt, onion and garlic (I use onion and garlic powder). Boil until thickened slightly, you basically want it to coat the back of a spoon an intensify the seasoning. You can add cornflour to thicken. It should be a highly seasoned sauce, it does not have to be spicy.

I then take the flour tortillas, dip it in the sauce until soft, add filling, roll and place in a pan. Do this until you have enough enchiladas. Cover generously with sauce and cheese. Bake until cheese and sauce is all bubbly, I normally do about 20 minutes at 200.

Oh, nearly forgot, I made vegetable stock, by scooping out some of the cooked veg, blitzing it in a blender with the water & spices - this is your cooking liquid

I don't have a recipe card for this one, I've not finished it yet, but it's simple enough & the photo shows the ingredients too - just stir fry the veg in olive oil, then add the rice, add water with added - pinch of saffron, turmeric garlic, lemon juice & smoked paprika

And we rarely have just boiled rice anymore- I have started to add a tin of chickpeas, and it just works.

Yesterday i made a vegan recipe I was very proud of. Basically, we had leftover rice and I was trying to do something with it. I sauteed onion, celery and carrots. Added the rice, flaked almonds, vegetable stock to make it quite wet, raisons and a little pinch of chilli and cumin. This mixture I then stuffed into halved yellow peppers, cooked for 30 minutes in the oven on 180, then poured over tomato pasta arrabiata sauce (the kind you get in tubs), cooked through until hot and served with runner beans and broccoli. It was really good.

Everybody in my household- even 4 year old DS LOVED it.

I love a stuffed aubergine myself, a mushroom stroganoff (mushrooms, onions, garlic, stock, wine, cream with rice) and Mexican refried beans in tortilla with rice, avocado and cheese on top. Also like the butternut squash/sweet potato casserole on BBC good food website, has bulgar wheat and lots of red wine in it. Delish.

It sounds odd but I love grated carrot, very finely cut red cabbage (both raw) with a hot topping - usually Mexican beans & sour cream. Yum!



Any veg steamed, I use a steamer in a huge pan, carrots at the bottom, courgettes next, then broccoli, when they're done massive handfuls of spinach/bok choy/anything that wilts! Second pan, massive amounts of mushrooms & broccoli stem sliced & cooked in a bit of butter.

Double cream, grated cheese, black pepper & mustard powder.

Tip out any left over steaming water, combine all three - try not to eat it all out of the pan before anyone else gets a look in! Any left overs reheat amazingly well and if I'm on my own I can just keep adding a fresh ingredient each night (such as a red pepper) and it lasts a few nights! I hate cooking, so it's perfect...


I cook lasagne in loads of different ways... Tomato, green, root, mushroom...they're all really different.

My dsc are really fussy when it comes to veg but they love my roasted butternut squash and sweet potato soup. I add a bit of curry powder for spice and just serve it with thickly cut tiger bread. This soup freezes really well too (no cream) so I pull it out for a hearty lunch if we've been out in the cold of a morning. Oh and one last thing, a put few spoonfuls over pasta for my 1 yr old ds as he struggles with soup and he loves it!

Also recommend frying 1cm thick slices of firm tofu on both sides until slightly brown serve with a peanut satay sauce laced with hot or sweet chili sauce depending on your taste

If you are into vegetarian cooking, then I can really recommend Anna Jones' A Modern Way To Eat. It is the best veggie cookbook I have owned since my old Good Housekeeping Vegetarian cookbook.
She does a cauliflower crust 'pizza' which is amazing. it's a blitzed raw cauliflower with oats and ground almonds, mix in 2 eggs, season and spread it out on a baking sheet. You cook it until golden, then add pizza toppings and bake again for another 10 minutes. It is much lighter than a normal pizza and doesn't taste too strongly of cauliflower (evidenced by the fact that my cauli-hating dc's eat it).

In chinese supermarkets you can buy deep fried tofu which changes the texture completely looks like small yellow fluffy cubes in the fridge area. Before using the tofu cubes put them in a sieve and pour boiling water over them to get rid of excess oil.
Then fry some fresh chopped spring onions, ginger and coriander leaves in oil and stuff each tofu cube with 1/2 teaspoon of this mixture by poking a hole in the centres.
To make the sauce. In a frying pan fry a cube of crushed garlic. In 1cup of vegetable stock combine until smooth 2 tablespoons of soy sauce 4 teaspoons of corn flour, 1 teaspoon sesame oil and 1 tablespoon rice wine or sherry. Add the mixture to the garlic and heat gently until you get a smooth sauce. Add the stuffed tofu cubes to the sauce and heat until everything is piping hot. Serve with steamed jasmine rice and stir fried vegetables.

Love this thread!

We are huge fans of pearl barley risotto. Really quick and easy and you can make it very tasty with the addition of wine/cream/parmesan. Loads of recipes out there..

My fav "meal in a soup" soup I invented myself:

Kale and Lentil Soup
Cook about 250gms of brown or green lentils in a large pot of water with a couple of well chopped onions.
Add the following:

  • stock (Marigold boullion is great)
  • some chopped/crushed garlic to suit your taste
  • finely grated lemon rind
  • loads of black pepper
  • hearty slug of olive oil (optional)
  • optional finely chopped fresh chilli


Once the lentils are cooked squeeze in a large bunch/bag of chopped washed kale, and the juice of a lemon or two.

Serve, with or without cheese.

Can also substitute all or part of the Kale with any greens - I love to add a bunch each of chopped coriander and parsley.
