Interesting veggie sandwiches?

I've recently turned vegetarian, but am struggling to think of lunch ideas other than cheese/egg!!
Can any more inventive mumsnetters help a new veggie and share their tastiest sandwich ideas?? Thanks in advance! Smile

What about a falafel one? Better as a wrap than a sandwich though.

Or Boots used to do a grated carrot and houmous one which was nicer than it sounds :)

Are they for packed lunch or for eating at home?

For packed lunch, I often have oatcakes, cheese, celery and radishes to avoid a sarnie altogether - still cheese though, sorry!

For eating at home:

Cold omelette with cucumber and salad leaves

Pitta bread, toasted, filled with salad, feta, mint, red onion

Chapati with a squished onion bhaji, salad and minty yoghurt/mango chutney

Quorn ham is okay with grainy mustard and salad

Pate from Holland and Barratt

Egg mayo

Roasted mushroom and hummous is absolutely gorgeous. Or other roasted veg and hummous.

Left-over veggie-fajita from last night's mexican dinner, with cream cheese

Sainsbury's do a very nice mushroom pate (but you can make it yourself pretty easily)

Slices of avocado, pine nuts and salad

Cold veggie sausagges and houmous

Remus, they'd probably be for packed lunches ... I am completely in love with the squished onion bhaji idea already! If there's anything finer than a bhaji, I certainly haven't tasted it Grin

Ooh just remembered one I had in a cafe, which was gorgeous:

Wholemeal seeded bread, sliced avocado, toasted cashew nuts, rocket, a sort of minty creamy lemony dressing.

Our work used to order in sandwich plates sometimes, and the brown bread, squished bhaji and some sort of carrot chutney ones always disappeared first!

DD2 likes cold veggie sausages in her sarnies - perhaps with a few salad leaves and a bit of chilli sauce?

Remus do you have a particular sausage fave? I've only tried Quorn 'British classics' so far, but some of the others look a bit cardboard-y!

Oh roasted mushrooms are yummy! Just chuck in a tin, drizzle with olive oil, bit of salt and black pepper, in medium oven for about 25 mins or less.
I want some now!

houmous and red pepper is nice.

I used to enjoy this lovely mushroom pate that comes in a tube, comes from health food shops usually. Cant remember the name, it's yummy with some crispy lettuce

Don't eat Quorn! It's terribly bad stuff.

...cucumber, spring onion, thin sliced pepper, beetroot, grated carrot, lettuce and a bit of oil or hummus on top of the filling.

That's Dh's "Happy Sandwich" he adds mustard too!

Thanks Neo, I'm trying to avoid too many meat substitutes as I think this is my one chance to get properly into veg! Grin I LOVE the idea of a 'happy' sandwich!!

I'm trying to rember how it's made - since weaning DD all nice sandwiches are off the menu.

It does need to be made straight away (or you can add the yogurt just before eating). I use a thick Greek yogurt so it's not too runny. I forgot that basil and salad leaves go really well too. The yogurt is a bit like
Mayo in the sandwich.

It's nice on toasted bread or baguette but I think it would work on soft bread if it doesn't hang around.
