I've recently turned vegetarian, but am struggling to think of lunch ideas other than cheese/egg!!
Can any more inventive mumsnetters help a new veggie and share their tastiest sandwich ideas?? Thanks in advance! Smile

Ds2's superhero sandwich - grated strong cheddar cheese, parsley leaves and grated dark chocolate with a single square of dark chocolate lurking in the middle...

He invented it himself and likes to eat it. Lots. Hmm
He is 5 though Grin

The rest of us leave him to it. But thought it might be an ... Interesting... variation on cheese when you want something different - and then decide that same old, same old sometimes can actually sound quite appealing Grin

Cottage cheese, peanut butter and chopped celery .. trust me...

Hummus pesto , grated carrot and rocket or spinach

Roasted veggies, - onion, aubergine, red pepper mushroom , sundried tomato with pesto and a little French dressing mixed in

Cottage cheese , beetroot and spring onion in pittas stuffed with watercress spinach and rocket

Dolcelatte with spinach and sundried tomato

Feta, olive spread (or chopped olives ) cucumber and tomato (a greek salad in a roll!)

Butter bean spread (or refried beans , or just mashed beans ) with roasted red pepper and spinach watercress and rocket

Watercress! just with butter.. (Yum)

Ok.. so 4 of those have cheese in but are so yummy .. Smile

I used to like Tartex, but it does terrible yeasty things to me , so I dont eat it any more

I think I could manage to be a halloumitarian, LOL. I might even find it an acceptable bacon substitute!

Also worth considering stuff like veggie calzones - doesn't have to be pizza style filling, shop in town we used to live in sold gorgeous ones with spinach & chickpea filling. Basically like a pasty but with bread dough instead of pastry (so less fatty).

Though speaking of pasties, keep meaning to make these: m.guardian.co.uk/lifeandstyle/2009/apr/18/dan-lepard-baking (can be baked instead of fried)

Homemade pizza is lovely cold too. Also - pasta salad with pasta, pesto, cherry tomatoes & salad leaves.

Another dish on my "to make" list is this spicy cold noodle salad: www.beyondkimchee.com/naengmyeon/ I am a bit scared that it might blow my head off tho! Grin

You can liven up a cheese sandwich by playing 'sandwich roullette'. Normal cheese sandwich but add a single dab of chilli sauce or hot mustard in a random spot on the sandwich!

Watercress is really nice with Marmite too. Or egg (much better than cress).

This is a good one, but it's cheese -

Toast 2 slices bread and let cool a bit. Butter one and spread wholegrain mustard on the other. Top the mustard one with cheese, watercress, rocket or spinach (or a combo), red onion, v thin slices of cucumber and beetroot, then stick the buttered slice on top.

Toasting the bread makes all the difference.

You can do Greek style pizza things too - (no good for a packed lunch but brilliant at home): Mash feta cheese with finely diced red onion, a bit of olive oil, a squeeze of lemon, some herbs if you have them and perhaps a bit of finely chopped chilli. Spread onto pittas, put on a baking sheet and shove in the oven until bubbly and lovely.

Roasted mushrooms are delicious stuffed with Boursin before they go in the oven. Squashed down they'd make a delicious sandwich.
