Interesting veggie sandwiches?

I've recently turned vegetarian, but am struggling to think of lunch ideas other than cheese/egg!!
Can any more inventive mumsnetters help a new veggie and share their tastiest sandwich ideas?? Thanks in advance! Smile

To be fair, that quorn article could apply to soya products or those containing nuts. America also has pretty strong meat and dairy lobby groups which are very anti veggie products.

We make fegg sandwiches (fake egg). Silken tofu mixed with English mustard and mayo.

Firm tofu cut into smallish chunks then fried drained and cooled and mixed with ketchup and mayo in a sandwich with rocket is yummy. We freeze firm tofu first, then thaw and press to remove excess water. It gives better texture and helps it soak up any marinades.

The Cauldron sausages (in the fridge aisle) are quite nice.

Just thought - do a search of my name and Chinese tofu in the food board, and you'll find a recipe for tofu baked with five spice powder. That would be brilliant in a sort of BLT style sarnie.

BinarySolo, I've been too unadvertised to try tofu but that sounds delicious! I also didn't know that about Quorn/anti veg, that's pretty interesting - I think I need to do some reading! Smile

Ooh you've reminded me that we sometime make our own fake bacon, or Fakon! Slice an aubergine into 1 cm thick slices. Marinade in BBQ sauce and bake until soft or crispy depending on your taste. You can also marinade and bake tofu or mushrooms and use like burgers.

Another tastey marinade is ketchup, marmite and soy sauce.

Have a look at the post punk kitchen for recipes. It's a vegan website but so bloody yummy that you just won't miss the animal products. I can thoroughly recommend any Isa Chandra moskowitz books too.

Btw tofu is incredibly bland so in need of a good sauce or marinade. But it will soak up flavours like a sponge, which is why it'sworth wrapping in a towel and leaving a heavy book on it for a while first to remove the excess water.

I'm rather fond of peanut butter with lots of crunchy salad.

Try different types of cheese, rather than just cheddar. Soft cheese is lovely with lots of herby, garlicky roast vegetables.

missSparrow sorry I only just saw your question of yesterday evening.

But they'll stay inside if your avocado is just ripe enough, yes (wouldn't work with a hard thing like cheddar). But no harm in ringing the changes with pitta or wrap!

Ooh I know you said you're sick of cheese sandwiches, but there's huge variety in cheese sandwiches:

Super strong cheddar (the stuff that takes the skin off the roof of your mouth) with horseradish sauce and sliced gherkins.

Brie with cranberry and red onion

Goats cheese with onion marmalade

Just wanted to make sure you haven't totally written off the lovely cheese sandwich. :)

Around age 10 I was addicted to cottage cheese, salad creme, lettuce, tomato, cucumber. It's the salad creme that does it; not sure why but it's a delicious combination.

I wish my children were like I was, when it comes to eating... but being a tad harsh as they are only 3 and 1.
