ok as you may know dh has been diagnosed wiht high cholesterola dn soa by product of this is now we are going to UP our fish consumption. Now i cna cook but am ratehr scared of fish(!) so i thought it may be interesting to have a fishy thread where we cna try out new fihs _ i knwo JOOLstoo is into eating more fihs.

so day one

Here is a lovely and very quick spicy mackerel dish:

Serves 2. Wash and dry 2 mackerel. Place them down on grill pan, and make several slashes along each one. Mix 2 tsp ground cumin with some coarsely ground pepper and some salt, and spread along the fish, smoothing down into the slashes. In a bowl mix together 3 tbsp olive oil, juice of a lemon, 2 cloves of garlic crushed to a paste and 1/2 tsp cayenne pepper. Set the fish under a moderate grill, and baste with the mixture every few mins, turning once. Watch to make sure they don't burn, and cook for about 6-7 mins each side. Serve with yummy juices, and sald and crusty bread, or with vegtable rice or cous cous.

There was another recipe on the BBC website, also for cod and chickpeas but it was a chickpea broth - might try that the next time (don't think it helped that I didn't have any fresh spinach and the corner shop only had frozen!) I must decide in advance what recipe I'm going to do the next time and get all the ingredients in...

ok

"olive and sunblisgh tomato crusted salmon wiht roasted "vine" tomatoes"

you need

4 5 - 6 ox salmon fillets
3 ox white breadcrumbs
zest of half a lemon
1 oz stoned balck olives chopped
parley chopped
1 oz sunblush tomatoes chopped
2 tbsp olive oil

heat oven to 180. Line a baking sheet with nonstick parchemnt and put aslmon on it

in bowl mix breadcrumbs, zest olives tomatoes adn parsely add oila dn mix. Squish down firmly on fisha dn cook fro 15-20 mins till golden.

to accompany put a bunch of toamtoes on a "VINE" ( they mean a stalk ffs) drizzle olive oil over and ppeer.. bake in oven at smae time but on seperate tin

they're like not-quite-dried sundried tomatoes. Think they used to be called mi-cuit or something. Like ready-to-eat dried apricots.

I did the Tuna Meatball recipe last week (just used normal tin tomatoes as I did not have any cherry ones). It was fabulous and DTS enjoyed it too. I need to improve the binding of the meatballs but other than that, it will become a regular feature on menu.Smile

On Saturday we had salmon marinated with olive oil, garlic, chilli pepper and black pepper served on a bed of spinach with stir fried vegetable rice. Delicious!
