no need for foil - marinade for 1hr or so then smack straight onto griddle skin side down.
Don't try and turn them till cooked halfway through and fairly firm.

kokeshi · 05/05/2006 16:06

Wow, so fast! Do you have any simple tasty marinades MrsBadger?

kokeshi · 05/05/2006 16:11

I also have loads of diced butternut squash (?!), can I whack this on too? I was thinking of the ubiquitous tin foil method again!

MrsBadger · 05/05/2006 16:18

marinades are really Dh's dept Blush, but there are a few good ones further down the thread, or try a Thai-ish one of fresh coriander, mint, ginger and chilli bashed and/or blended with garlic and some lime juice and maybe a bit of sugar.

no idea on the squash - sorry!

tracyk · 05/05/2006 16:20

nice one - only done in oven but sure barby would work too. foil parcel with olive oil, chilli, lime juice and cubes of mango.

kokeshi · 05/05/2006 16:28

thanks folks, off to get some marinade just now. Mmmmm, looking forward to it xxx Smile

dp has just been diagnosed with high cholesterol too -- he's not overweight but both parents and both brothers have it too so we're trying to make an effort. He usually eats loads of butter, cheese, charcuterie etc.... you know, a french diet! Am on a mission to do more fish too - can't seem to cut out the prawns though :)
Will have a look in JO for mackerel ideas.... need to cook them today!

melrose · 08/05/2006 09:05

Fishworks book by Mitchell Tonks is v good, lots of v simple recipes without tons of odd ingredients and sorted by fish so easy to find something if you have bought fish already!

melrose · 08/05/2006 09:07

I have some truot fillets, bargain on the fish counter at Sainsburys last week so bought a huge piece, portioned it and froze it, taken some out for tonight, should I just cook like Salmaon? Ideas welcome...

speedymama · 08/05/2006 10:44

I cooked trout last Wednesday for myself and DH. He said that the meal was better than that you get in a restaurant but was really suprised how quickly I made it.

I work on Wednesday and collect DTS from nursery on the way home. I got in at 1740 hours and turned on the oven. I peeled a couple of large potatoes, par boiled them for 5 minutes and steamed half a bag of spinach and one chopped leek, chopped a clove of garlic and mixed it with a table spoon of olive oil, a dash of salt, a pinch of hot chilli powder, juice of one lemon and spread the mixture on the trout fillets. I then placed the spinach and leek in an oven proof dish, placed the trout on top with all the liquid poured over and put in oven. I chopped the potatoes into cubes, mixed with a little oil and cumin powder and placed in oven also. This was all done by 1805 hours. We then bathed the DTS, gave them their bottle milk, read them a story, put them to bed and we ate our dinner at 1900Smile. It was a great mealGrin. I adapted the recipe from one of the links that Cod posted so thanks CodSmile

NEARLY A NICE MUM WHATS YOUR DHS CHOLESTROL READING
MY DH IS EXPLODING WIHT ALLT HE PULSES WE ARE NOW EATING

oh shit sorry

OP posts:
MrsBadger · 08/05/2006 13:55

oh, meant to say, fresh haddock or mackerel fillets v good dipped in egg (I know, but it's just a little bit) then seasoned oats and fried with only smidge of oil.
The oats are good for cholesterol dont'cherknow and it's as tasty as but better than oven fish in breadcrumbs.

nowanearlyNicemum · 08/05/2006 19:45

mrs badger, will try the oats next time - didn't have any in the hoose.
in the end I just fried them in a teeny weeny bit of oil and we had very lemony mash and some green beans with them. I actually think whole mackerel are probably best left as they are - it was yummy, and SO cheap too.
cod, I'm not sure that the cholesterol measurements are the same over here. dp is slightly over 'normal' - 2.12 - so he's not on medication or anything but the rest of his family are well over and on appropriate drugs so we're doing prevention really. Know what you mean about the pulses - they're bloody good though :)

I made lovely salmon and noodles last night v.healthy too. Marinade salmon for 30 mins in soy sauce, orange juice, spring onions, garlic and chilli then bake for 15 mins. Serve artistically posed on top of stir fried veg and noodles.
