So what's your vegetarian dinner?

We're not vegetarian but I love it and dp and the dss eat it too. We've had way too much meat lately so I thought I'd make vegetarian for dinner tonight. I've decided on Bean stew. I got the recipe of Netmums Wink It's really easy, and uses tins as well as fresh veg.

What are you making?

I've eaten this (including subsequent variations with added sweet pepper/onions etc) about four times in the last fortnight. It is lush!!!!

I'm feeling very lazy so we will be having spinach and tomato sauce on pasta, with fresh mozarella. I make the sauce by heating up some passatta, sticking in some frozen spinach, and just pour this straight over the pasta.

Vegetable stir fry with rice noodles is quick and easy. Add Quorn pieces if hungry!

Roasted vegetable ratatouille with puy lentils with sun dried tomato.

If I'm feeling lazy, loads of roasted veg (baby potato, courgette, aubergine, butternut squash, pepper etc) with cheese grated on top and a balsamic vinegar reduction(from a bottle).

Well now I'm hungry Smile

I'm using passatta too worldgonecrazy. I think it's fab and so versatile.

I'm just hoping ds2 will eat this bean stew/bake as he's not into beans that much. He does like chickpea enchiladas though so I may even wrap this up for him in tortilla wraps, top with cheese and bake?

Not tonight, but on Tuesday I made
curried lentil, rice and carrot burgers
carrot and sesame burgers
mushroom burgers
spicy mexican bean burgers
They were all delicious.

Either ratatouille from the freezer, pizza from the freezer, or take away, depending on my level of energy when I get in from work!

I'm doing WeightWatchers at the moment so have been having a lot of stir frys with either tofu or Quorn pieces and lots of grilled vegetables. I've been eating a TON of asparagus done in the griddle pan, it's bloody lovely, especially with just a sprinkle of parmesan.

I've never heard of sriracha either - I just use chilli sauce.

It's a great recipe and now I play around with it every time I make it. And I keep the fridge well stocked with tofu (much to DP's dismay).

It's an excellent way to cook the tofu - I see it working really well as a sweet & sour dish too.

I'm slimming so been eating it with pile of broccoli & courgettes etc.

It is now firmly in my 'repertoire'

we even have people washing feet.

HipHop, thanks I'll just use my hot sauce then. I really like the sound of it, love tofu anyway.

I'm also slimming I need to lose 2 stone! I don't like diets so am just cutting down on portion size and fat. I love big portions though so will fill up on veg.

Talking of tofu, this is rather good.

I've got some creme fraiche and some stilton in my fridge so am going to make a pasta sauce with that and chuck in some mushrooms. Quick one tonight as I'm feeling worn out from having three boys off school.

The spinach and pasta souffle from Hugh FW's Veg book. New favourite dinner in my house. That book rules - and I say that as a huge lover of meat.

I have been busy!
I love cooking, it's a hobby so I'm happy to make several dishes.
I tried 14 new recipes last week, and tonight is number 7 of this week.

I buy Sriracha from my local Chinese owned newsagents, it's addictive stuff.

Netto, is sriacha a lot different from other chilli?

Dp and I also love to cook. Tbh tonight's is a big cheat as I don't use many tins but it's so nice, have had a taste already. Dp cooks from Delia books mainly and I from allsorts of recipes and even make them up.

Vegetable curry with spinach, lentils, pumpkin, cabbage and carrots DP calls it Fart Soup. Served with yoghurt, bread and raisins.

We're having roasted veg with couscous, it's v easy, just slam a load of veg in the oven - courgette, carrots, onion, peppers, squash, mushrooms etc etc, brush with olive oil and herbs - for about 1/2 hour, then add feta cheese and cherry tomatoes for 10 more mins, serve with couscous, Yum.

Veggie version of a meat dish I do: un-chicken gumbo :)

Heat some oil, fry 1 chopped onion, 1 chopped stick of celery and 1 chopped green (or whatever colour you feel like) pepper. Add quorn chicken pieces (or supermarket own brand equivalent - if making this meaty, use chicken thighs and fry them in the oil first until they're well sealed on all sides. Keep them aside while you fry the onion etc then chuck them back in), 80g rice, a couple of handfuls of okra (fresh or frozen, topped and tailed), 2 tbsp tomato puree, 1 chopped red chilli (deseeding is for WUSSES) and a good helping of veg stock (or chicken) - enough to cover everything in the pan. Simmer for about 20 minutes with the lid on, stirring it and keeping an eye to make sure it doesn't go dry. Serves 2 :)
