So what's your vegetarian dinner?

We're not vegetarian but I love it and dp and the dss eat it too. We've had way too much meat lately so I thought I'd make vegetarian for dinner tonight. I've decided on Bean stew. I got the recipe of Netmums Wink It's really easy, and uses tins as well as fresh veg.

What are you making?

I can get paneer in Asda and Morrisons here, it's not too hard to find.

Chickpeas better in a curry, I think.

We had jacket potatoes, salad, coleslaw and quiche (bought) - a v lazy meal!

Tomorrow I'm going to do puy lentil lasagne with lots of port in it. Will have it with salad and will probably do a fruit crumble or maybe Eve's pudding for afters.

:) I'm only allowed to go to Waitrose every now and then (for essential purchases of Lindt sea salt chocolate and yummy chipotle paste for chillis) because otherwise I just 'pop in for milk' and come out 30 squid lighter!

We had this tonight. It's a bit of a faff as I make my own lasagne sheets and prefer to make the tomato sauce, but it's yum. Yesterday we had veg curry - lentils, cauli, tinned toms and spinach. We're not vegetarian but we've really cut back on meat and I'd like to even more so thanks for this thread Smile

We had wild garlic and veggie chicken stroganoff with rice last night, and are making homemade pizza tonight.

Tomorrow I have plans for a fennel and feta tart with purple sprouting broccoli and the first of the local asparagus [mmmmm]

For those that can't find paneer- you can always have a go at making it. Anjum Anand does a recipe I think.

Last night I made the vegetable biryani from HFW's veg everyday. I left out the sultanas as I don't like dried fruit in savoury food, and didn't bother with the slivered almonds on top.
It was really good, a good weeknight meal.
I also made malai kofta with spicy gravy
This was really, really good, a bit faffy so not for weekdays but totally worth trying. You could do the sauce in batches to freeze.
I subbed the cashews for macadamias, as I had a pack open from a Balinese curry I tried recently.

Did the New potato, tomato and boiled egg salad tonight, except I left out the boiled eggs!
I did it as a side dish to Asian roast salmon.
It was a hit.
I loved that it used chives, that's the one herb I can keep alive on my windowsill, the rest seem to die within ten minutes.

Just eaten v v delicious lasagne, although I was lazy and used creme fraiche etc instead of making a cheese sauce.

I love tagine, in fact I was just saying how I fancied cooking one this week - but the dds say they don't like it. Barbarians! I don't understand why, as they like every single ingredient I put in it.

I'm a bit weird with tagine, it's not that I don't like it, but so many have dried fruit in, which is just wrong in savoury food.
Do you have a good recipe that doesn't have me suddenly eating a horrid dried apricot?

Ugh no - dried fruit does not belong in savoury dishes.

I don't use a recipe but essentially it's a load of vege cooked slowly in a 'sauce' made of honey, paprika, saffron, lemon juice, oil and stock plus a couple of skinned, seeded and finely chopped tomatoes. I usually use onions, new potatoes, carrots, red peppers, courgettes, cabbage, artichokes (from a jar) and olives - but you can put anything in really.

Oh dried fruit is lush in savoury. There's a lovely beef stew with dried fruit in one of my recipe books and it's fantastic. Has red wine in it too. Not veggie though of course Wink

Are you ok with fruit in savoury, is it just dried that's wrong?

I'm weird about savoury and sweet flavours being mixed.
I like pork with apple, lamb with redcurrant and also red cabbage with redcurrant.
That's about it though.
Saying that, I'll eat pretty much anything I'm served and could do a good job of pretending to like it, and I will occasionally cook things I don't like that DD does (I'm doing a chicken and pepper pasta recipe for her from Diners, drive ins and dives this week), and have a small portion, I just wouldn't choose them.

I couldn't find paneer in our Morrison's. The lady on the cheese counter hadn't heard of it! Hmm None in pre-packed either? Think I'll try Tesco they're usually good?

There's a programme on at the moment where the lady's making refried beans with onion and peppers, garlic, coriander and salt and a scrambled egg base and packing them in enchiladas. Looks nice.
She's talking about having it again for breakfast. Don't think I'd like to be sitting next to her in a confined space. :)
