So what's your vegetarian dinner?

We're not vegetarian but I love it and dp and the dss eat it too. We've had way too much meat lately so I thought I'd make vegetarian for dinner tonight. I've decided on Bean stew. I got the recipe of Netmums Wink It's really easy, and uses tins as well as fresh veg.

What are you making?

It's a slow cooker veggie chilli night in the moogdroog household, own recipe. By the time 6 o'clock comes around it feels like someone else had made me dinner
I bloody love the Hugh fw book and all. Made some lovely things from it. I love mr. Ottolenghi as well. Yum.

Ebb I wonder why it says 7 squash when it's for 4 people? Is it for 3 and one not quite so hungry one? Wink

Well, our dinner went down very well. Even ds2 ate it. I put the mix into wraps, added homemade bechamel and grated cheese and baked as enchiladas. I had my mix with boiled rice and a bit of grated cheese.

CuriousMama, you should be able to adapt the recipe for the stovetop... I always use canned beans, which are basically pre-cooked, so just set it up in one pot and cook until the liquid is absorbed and the rice is cooked (add extra water if the rice isn't cooking and the liquid is going). Probably. I take no responsibility for you trying this and having to order pizza because it didn't work, mind :o

We're just back from holiday, having eaten far too much rubbish, so I'm craving vegetables. I'm going to make a huge veggie curry to include - potatoes, carrots, chickpeas, spinach, green beans, paneer. We will have it with spiced rice and raita.

CuriousMama - I urge you to try it! Just fry slices or cubes of it until golden brown all over and then add to any curry. As a veggie, I really like its chewy texture. If you like haloumi, you will love it.

I loved all the burgers, DD wasn't keen on the mushroom ones, but that's hardly surprising as she doesn't like mushrooms.
We both loved the cauliflower pizza (thread on food board).
Check the HFW veg everyday thread too, I've tried a few dishes from that all with great success.

What have you made from HFW lately, Netto? I still haven't been inspired by it enough to actually cook anything from it. I seem to be missing the point of it, somehow, as so many people on here are raving about it. Please inspire me!

I haven't used it this week, I'm making a lentil side dish on Sunday to go with roast salmon (we're not veggie), and the veg biryiani tomorrow night, possibly with the malai kofta we spoke about the other day.
I'll let you know how they go.

Spiced dhal with spinach, served with a Madhur Jaffrey carrot pilau. (basmati rice, sauteed onions, grated carrot, turmeric, sultanas and whole spices. )Real comfort food for a chilly day. Oh, and a tomato/onion/chilli sambal on the side.

That tofu thing looks gorgeous - must buy some chilli sauce.

HFW's celeriac dauphinoisse type thing is gorgeous (not in the Veg book). Will find the recipe if anybody is interested. I like it with a sharply dressed green salad but it would be good with sausages too!

I've some tofu in the freezer, I love it, DD not so much, but I've bookmarked that to try as a selection of Chinese dishes.
I did a Chinese tripe dish this week, with sweet and sour chicken, the deep fried version, which would work really well with tofu I think.
