So what's your vegetarian dinner?

We're not vegetarian but I love it and dp and the dss eat it too. We've had way too much meat lately so I thought I'd make vegetarian for dinner tonight. I've decided on Bean stew. I got the recipe of Netmums Wink It's really easy, and uses tins as well as fresh veg.

What are you making?

You can have it! In fact, I posted it on here somewhere recently but can't remember where.

Here it is:

Chop 2 onions fairly finely and 2 cloves garlic plus 2 or 3 really finely diced carrots - can add pumpkin, squash, sweet potato at this point if wished..
Fry to soften for a bit, not to colour.
Add one chopped red chilli, one teaspoon-ish of hot paprika, one teaspoon cumin seeds, one teaspoon (or less) of dried thyme plus a big grinding of black pepper.
Add a cup of strong black coffee and a teaspoon of good quality cocoa plus a small bottle lager and the finely chopped stalks of a bunch of coriander plus two teaspoons of chipotle paste.
Add a tub of passata and then fill the tub with water and add that.
Add a couple of handfuls of red lentils (for bulk) and a couple of handfuls of puy lentils (for colour and texture) and stick in the oven for about forty mins (you might need to add more water).
Add drained beans (I use butter because dd1 won't eat kidney but any will do, I guess) and a chopped red pepper and bung back in the oven for another ten/fifteen minutes or so. It will probably need a bit of salt and a bit of sugar, possibly more chilli (flakes) etc.
Serve with more coriander, soured cream plus anything else you fancy!

today we've had Itamar's bulghar pilaf (Ottolenghi recipe), topped with falafels and a vegan lemon/chive/yoghurt sauce

due on the menu this week:
tofu wieners and corn on the cob
crunchy papardelle
mushroom and herb polenta
stew and dumplings
surprise tatin

the papardelle, polenta and tatin recipes are all Ottolenghi, from Plenty. It's a really fabulous book!

haha just noticed someone else has already mentioned Plenty.

Honestly though, a friend recommended it and I got it for Christmas and a lot of the recipes I've thought looked faffy or just plain weird, but without exception everything I have made from it has been utterly delicious!

How do you do your stew, ThisIsYesterday?

I am rather fond of the Sainsbo's veggie hotdog sausages (they are nicer than the tofu ones!) and make a decent sausage casserole with them, which we eat with hassleback potatoes.

we have egg intolerance issues here, so can't eat most veggie sausages unfortunately. but the boys love the taifun tofu wieners so we have them now and then

my stew recipe can be seen here

although that's really only one version of it. i vary it depending on what veg i have in.
i normally have parsnip and swede in it, and any other random veg that's left over at the end of the week.
sometimes use a tin of tomatoes and a tin of canned beans/pulses instead of the fresh tomatoes and baked beans
oh, and sometimes add a dash of smoked paprika

Tonight it's chachouka from Hugh F-W book, plus some not so veggie chilli sausages (we have DSS with us), salad and wraps.

Could you share that please?

Mind you, I hate the texture of coconut, but love the flavour, so I use coconut milk, and cream a lot, but never actual coconut.

It's not a chutney, as such - that's just what I call it - and I made it up so it's not at all authentic but it is nice!

Finely chopped green chilli
Mix with dessicated coconut
Add a bit of natural yoghurt
Add a load of finely chopped coriander and s&p
I like it fairly stiff so not too much yoghurt. It's lovely with poppadoms or on the side of a curry.

Actually I'd almost forgotten but I do a similarish Sam Stern one but it's a dressing for cucumber.
I made it on Saturday as it happens with chicken satay.

I'll have to try yours and see if it can convert me to liking coconut.

We've just had this
Faffy, not a general weeknight meal (I don't work, so OK for me), but great.
I did bottle it at the last minute, and added an egg to the mixture to bind. I didn't want the fall out of the collapsed mixture in my deep fat fryer. I love it, but I utterly hate cleaning it.
I pulled out some other curries from my freezer to go with it too.
A Simon Hopkinson dahl, and a Rick Stein aubergine and mushroom curry.
I did rice too.

We have omlette or fritatta at least once a week in casa wordfactory. Or a tortilla with onion and potato.

Nigella also suggests a nice one with peppers, chilli and fresh corriander. I also add in a whack of cumin.

I also like one with goats cheese, banged under the grill to ensure a gooey finish.

Also DC are pretty keen on pasta with pesto.

Just had Morrison's best goat's cheese and caramelised onion quiche for lunch mmmmmmmmmmmm. Had it with salad so that negates the calories doesn't it? Wink Only ate half anyway Blush

Tortilla - yum. I had one for my lunch today - just onions and potatoes but v lovely.

Dinner tonight was veggie sausage casserole and crusty bread. We now have no food left because I haven't been organised enough to do a Sainsbo's order, so no idea what we'll have tomorrow - egg and chips maybe? :)

I can tell Netto Smile Dp and I do too. Dcs are getting to be foodies as well.

Good Remus I can't wait to make it. Will probably make a curry Friday night so will make that too.
