So what's your vegetarian dinner?

We're not vegetarian but I love it and dp and the dss eat it too. We've had way too much meat lately so I thought I'd make vegetarian for dinner tonight. I've decided on Bean stew. I got the recipe of Netmums Wink It's really easy, and uses tins as well as fresh veg.

What are you making?

I love Indian and Italian foods so it's pretty easy!

I love some of the quorn stuff, and the carnivores around here prefer the sausages to meat ones!

cambridgeferret that sounds nice. Yes she will stink of garlic. I think everyone should be made to eat a clove of garlic every morning and then no one would smell it? Grin

Not sure what to do for dinner tonight but it will be vegetarian and low fat. Dp and I are trying to lose weight.

Quorn all the way! Use in casseroles, pasta sauces,chilli, lasagnes etc.. it's easy to cook with tasty and no one I've served it to said they didn't like it. Those who don't like it haven't tried it.

Tonight it's Hugh F-W's aubergine/french bean curry with rice and mini wholewheat pitta bread.

Tomorrow it's roasted veg/pecan nut strudel with mspuds dauphinoise and a lemon tart for pud (friends coming).

We also like quorn bolegnaise/lasagne, quorn sausages with mash and onion gravyy.

I like dahl with yoghurt and rice

Kidsmlike homemade veggie/tomato sauce (pureed) with. Sausages in it and pasta.

I had creamy leeks on toast for lunch. Farkin luveeeerly

Delia Vegetarian is good for faffy stuff

My really old Good Housekeeping Vegetarian book is good for ye olde veggie recipes such as beanburgers.

lentil and ginger stew is a favourite in the zoo household with rice

and anything with chickpeas...littlest zoois obsesssed with giraffes and all things yellow or orange have the giraffe coloured connection,thus chickpeas are "rarfy peas"Grin

Dp and I have been out 't club and he's in the kitchen now concoting something delish. Won't be veggie though. I'm doing that tomorrow with the paneer.

I really want to do General's tofu it's right up my street.

I find Ottolenghi a bit faffy sounding tbh - haven't got the book but there are loads of his recipes on the Guardian website.

My veggie chilli recipe is the best EVER - HFW cannot come close! :)

It's on my wish list, but need a good curry book first, and still waiting for two books to be delivered, plus I've not cooked from the one I got this week yet!
You must try the scallion pancakes, they are so good, and so easy.
I can see me doing them with every Chinese meal we have, and sometimes just because I want to stuff my face with themBlushGrin

We just had cabbage and colcannon bake - essentially posh cheesy mash layered with cabbage over a tomatoe sauce, it's yum if a bit of a faff

We arent veggies but often eat veggie.

I like curries - so much yu can do with veg and some spices! I do a basic dahl, potato & cauliflower curry, sweet potato and spinach curry or a chana massala for a quick dinner. Also mad about bmbay potatoes. Chapatis are pretty easy to make, too.

Thai veg curries are good, too, and if you buy a curry paste they are super quick.

Mha,loumi is very versatile. I like it roasted with butternut squash, peppers and curgettes, or grill chunks with peppers, mushrooms and tomatoes on a skewer.

BBC Good Food has a good recipe for veggie enchiladas which dh makes sometimes (google it, I cant seem t make links work n my iPad).

Off the top of my head, we also have:

Veggie shep pie - sweet potato mash and red lentils
Lots of pasta - make our own esto (very easy) or I do Jamie oLvers mozarella and sunblush tomato bake- very yummy

Mixed veg crumble ( sweet pot, butternut squash, onion, pepper, celery, carrot, toms etc) with a squish of Tom purée and topped with a breadcrumb , lemon rind, feta cheese and thyme topping whizzed with a slug of oil . In oven now and I am a bit peckish . Will serve with a big dollop of creme Fraiche.
