I only cook hobby things, whatever my current obsession is - recently it's been roasting nuts and making nut butters, before that it was roasting nuts and making flapjacks and granola. At one point it was Scots tablet. Made pounds and pounds of that getting the technique just right. DP does all other cooking because I'm useless and selfish.

Also cooking is hard and expensive if you fuck up so since he already has the skills it makes more sense for him to do it. I do prep veg etc.

I promised my brother, while I was happy and doing shit, that I would make nut and seed butters for him this Christmas. I'm now shitting myself as I've remembered that I always fuck that kind of thing up.

I've found cashews the easiest to make a standard peanut butter textured butter from. You just need to keep on scraping up the stuff off the bottom and sides of the machine for far longer than you would think reasonable. Oh, and use roasted cashews. Raw nut butters are more difficult.

That is one of the bad things about being a human I think, sooner or later you will fuck up something. But at least on that we are definitely all going through it alone together

Mmm, cashews.

If they're not roasted, 12-ish minutes at 150C on a baking tray, stirring halfway through, should do it. If you bung them in the processor when they're still warm it all happens more quickly.

It's hard to find ready-roasted unsalted cashews. I've made peanut butter from roasted salted peanuts and the salt levels were fine, so cashew might be okay with salted, but if you're used to bought cashew butter, its likely to have been unsalted.

Just don't rinse the salt off Grin Nut butter and water do not mix.

The sad thing about nut butters is that you can turn an enormous bag of nuts that would last weeks of snacking into a tiny jar of butter which frankly, can be used up on one plate of crackers and a couple of spoon-licks.

Nobody who has not lived in a house with no kitchen cabinets and a makeshift sink in the kitchen, and new kitchen cabinets and worktop in the living room, for the last decade, and not been allowed to just hire someone to fit the bloody thing, can possibly understand how distressing this is.
