Thanks Flubba fingers crossed :) Could you post the recipe for your chutney if you don't mind please?

FlubbaBubba · 08/10/2011 15:07

Mais oui cheese;

Caramelised Onion Chutney
6 large onions (red are the best IMHO)
3 cups vinegar (I used a mix of red wine vinegar and balsamic - you can also use sherry vinegar I think)
3 cups brown sugar
2 or 3 bay leaves
small pinch of crushed peppercorns (probably about 20)

Chop the onions (as coursely or finely as you like)
Heat with a small amount of sunflower oil in a stainless steel pan (I used a normal pan Hmm until they are soft.
Add vinegar, brown sugar, bay leaves and crushed black peppercorns.
Bring the mixture to the boil and then simmer gently for 1 to 1 1/2 hours until the onions have gone translucent and all the liquid has evaporated. (I had to simmer for almost 2 hours, but maybe that's because I didn't use a 'stainless steel' pan)

Et Bob, c'est ton oncle! (Well, almost...)

Pour the hot mixture straight into small (200g) sterilised jars, seal, and store somewhere cool and dark or in the fridge.
The chutney should keep for at least 6 months.
To ensure the chutney can keep even longer (1 year plus), put the sealed jars in boiling water and simmer for 15 minutes. Line metal jar lids with greaseproof paper to protect them from the vinegar in the chutney.

Chutney should be left for 4-6 weeks to mature allowing all of the wonderful flavours to develop and mix

Thank you very much :)

Pinterest has been keeping me busy today, there's sooo much on there

electricslide · 08/10/2011 16:13

I've done my first ever chutneys and am getting started on vodka. Do you sterilize the bottle that the vodka and sweets/spices is left in? I was going to use a coke bottle and don't suppose I can put it in the dishwasher. Do I need to Milton it?

WhoresHairKnickers · 08/10/2011 18:31

I have followers, but have nothing pinned yet!!!

FlubbaBubba · 08/10/2011 19:08

Have you invited anybody Whores ?

prolificwillybreeder · 08/10/2011 19:55

flubbabubba that chutney sounds amazing and amazingly easy!
Mmm bet it tastes darn good with some Seriously Strong Cheddar.

Folicacid · 08/10/2011 20:21

Yum flubba How many jars of chutney does that recipe make?

FlubbaBubba · 08/10/2011 20:39

Ooh yes, a good mature cheddar would go nicely. Goat's cheese is my preferred cheese with it - proper 'nice' goat's cheese. Mmmmh. Goat's cheese and my seriously sticky onion chutney. Mmmmmhhhh :)

It made just four jars - I reckon three of them were 200ml size and one was nearly 400ml (I think) Blush

Seriously easy, and seriously tasty (so far, although that's just licking the spoon! :o)

prolificwillybreeder · 09/10/2011 08:23

Mmm goat's cheese! Perhaps a big grilled slice with chutney!
Oh I have to make this, I need jars damn it!
Glad it only makes 4 jars though. I remember a few years ago being stuck with jam... for months and months.

FlubbaBubba · 09/10/2011 08:32

I bought some very cheap jars (mint sauce I think) from Sainsbo's basic range. Binned it Blush and used them - perfect size for presents I reckon :)

prolificwillybreeder · 09/10/2011 12:07

Ah that's a good idea. They are a nice size jar.

BabyDubsEverywhere · 09/10/2011 12:30

Just thought Id stop by :)

I spent all day yesterday:
wrapping presents, (think Ive pretty muich finished the kids stuff)
Sorting out decs and getting a list of whats missing,
Pulling together all my christmas dvds (40 odd!)
And stringing all the orange slices together to hang in the windows, finished them with a red ribon bow tied onto a cinnamon stick. Look quite nice, Im happy with them :)

Feel soooo Christmassy today, only 76 days to .......11 weeks today!!!

For those who are making candy cane vodka - Julian Graves have red stripe (no green on it at all) candy canes on 3 for £1, they are normally 69p each.
