In need of some January tea time inspiration, what will you have for tea tonight? Any of your favourite go to recipes/meals also appreciated :)

Soy and honey Chicken,peppers and mushroom noodle stir fry with garlic,ginger and chilli topped with peanuts.
It was absolutely delicious

The main thing I want to know with some of these recipes is when do you finish work and when do you start cooking?

I'm not working just now but, nevertheless, I cheated with the lasagne. It's M&S creamed spinach and M&S broccoli cheese bake, taken from their containers and alternately layered with lasagne sheets. Topped with cheese. Little effort on my part.

I'm not going to be helpful I'm afraid: the kids have had a "breakfast dinner" tonight as my husband is out, it's end of week and we're all tired! So peanut butter sandwich, fruits and plain yogurt! I'll make pasta and veggies later for me.

A bit more helpful:

  • yesterday was pork mince and veggie stir fry (just a bit of ketjap Manis, garlic powder and ginger for the kids, then I had more chili and spice for us).
  • tomorrow is beef and carrot stew

We start cooking around 5/5:30 but the kids have had tea at 3:30 at nursery which helps.

We try to have at least 1 slow cooked meal prepped over the weekend, and 1 "freezer" meal like fish finger or homemade leftovers. Then 2 "under 20 min" like stir fry, omelette, fried rice...
And then 1 we improvise, usually Thursdays as that's when the weekend shops runs out.

I like to batch cook and have a big chest freezer i fill up. Means on weeknights when we have clubs/homework etc we can have v quick tea just by adding pasta/rice/potatoes/veg to something from the freezer. I deliberately used up everything out of the freezer before Christmas intending to fill it up with batch cooking once the Christmas goodies were gone. Only I got the flu on hogmanay!! Made first batch meal today, sausage pasta sauce. Fed 3 adults & 2 kids tonight and have another 3 family (2 adults, 2 kids) portions in the freezer.
Will be making bolegnese, chilli, ravo mince, sausage casetole & soup over the weekend to start stocking up again 😋

We had ham, egg or pineapple and chips. The ham I boiled and then baked and it was delicious, and we have plenty left for lunch for the next few days

Saturday is Spaghetti bolognaise
Sunday Roast chicken
Monday veggie enchiladas
Tuesday pan fried fish with savoury rice
Wednessay spicy prawn pasta
Thursday Chicken Tikka Masala

My elderly parents come to us for dinner every Thurs to get them out of their house, spend time with us and our pets as they no longer have any (first time in all of their lives so miss them but won't get any more). So I do their favourites. Last night was fillet steak, triple cooked chips, garlic butter portobello mushroom, baked beef tomato, peas and a green side salad. Then apple strudel and custard.
Tonight it's just us and I'm making a Thai chicken red curry with ready made M&S Chinese starter selection. Other weekday faves:
Chilli, cottage pie with veg, a prawn and crab (or chorizo) pasta dish with garlic bread and salad, sea bass with Asian dressing, noodles and stir fry veg; gammon ham, egg and chips; liver and bacon, mash and green veg; toad in the hole with mixed veg; chicken stuffed with cheese, wrapped in Parma ham with mini roasted pots and green veg; chicken in a mushroom sauce with rice and veg; butter and lemon baked cod with rice and green veg....that's all I can think of atm!

I made a 'fake Nandos' to last us three nights. Peri peri baby potatoes, tomato and paprika rice, corn on the cob, petite pois with seasoning, Chicken and quorn fillets cooked in Nando's marinade, grilled halloumi.

Tonight it’s homemade prawn and vegetable fried rice with a chopped salad on the side. The prawns are huge and fresh straight from the fish market.
