Roasted sweet potatoes with cherry tomato, mini cucumber, spring onion & parsley tabbouleh served with hummus and tahini sauce. It's tasty.

Probably a bowl of fruit and fibre!

cardibach · 16/01/2025 17:44

Marry Me Halloumi.
Bloody delicious.

MumChp · 16/01/2025 17:46

Leek/potato soup with bacon and homemade bread.

calmandcollected101 · 16/01/2025 17:50

Veg and cabbage soup, bacon on top with croutons

evtheria · 16/01/2025 17:52

DP came home with a KFC bucket deal thing, he and DS ate that. I had some leftover beef taco mix (salsa, cheese, corn salad). We would have had chicken parm with green beans and mash instead, if he had not messed with my meal plan AngryGrin

Mischance · 16/01/2025 17:55

Salmon fish cake with carrot and cauliflower - all bunged in the remoska and half an hour later - bingo! - a meal!

AHFBridport · 16/01/2025 17:55

Cottage pie, mince & veg are simmering away right now.

I shouldn’t have read this thread. I’m on a diet.
So hungry 😫

Can you elaborate?

I used cherry toms instead of sun dried and added some mushrooms. My cream was on the turn and I wanted to use it up. https://www.happyveggiekitchen.com/marry-me-halloumi/

Thank you! Sounds good.

Korean spicy stir fried pork with rice and stir fried broccoli on the side. I made a beef with lentil pie earlier (topped with mash rather than pastry) which is in the fridge ready for tomorrow!

The main thing I want to know with some of these recipes is when do you finish work and when do you start cooking?

CoffeeWithHer · 16/01/2025 19:05

Tesco finest meal deal - lasagna* and seasonal greens, with coleslaw and garlic dough balls.

I buy every week for when I know I’ve got a busy day and will feed all 5 of us. Kids happy as I order the glass bottled coke and I get the rose. Cheers.

*it’s actually lovely but not a patch on my mums!

SnunchBunch · 16/01/2025 19:06

DC3 has made bolognaise in food tech so some of that although sadly he's put mushrooms in so I'll be politely picking those out 🤢

🤣 I was thinking the same but if I WFH I can prep dinner before I start work which is lovely; otherwise it’s a ‘shove it in the oven’ or can it all go in one pot dinner?

Leek/potato soup with bacon and homemade bread.

This sounds like perfection!

ColinOfficeTrolley · 16/01/2025 19:10

Bit of a Mish mash tonight as trying to use stuff up from the freezer.

Dh had beef, Guinness and stilton pie. It was an individual one he made from leftovers of a family pie he made, with wedges and gravy

DD has loaded wedges - leftover Bolognese sauce (beef mince) on top of wedges with melted cheese and jalapenos

I had leftover carrot and parsnip soup with a salmon fillet mixed up in it.

As I said, a mishmash 😂😂

Backhometothenorth · 16/01/2025 19:10

Pan fried Salmon and broccoli followed by huge apple crumble (apples already stewed and frozen) with homemade custard. Blooming lovely

Butteredtoast55 · 16/01/2025 19:14

Only me at home this evening so it's linguine with a tomato and basil sauce I made on Monday, and some M and S olives with feta mixed through it. I'm really cold and it can't cook quickly enough!

The soup was in the freezer. I always have one ready made as Thursday is running late because of daughter's music class. Thursday is our 'soup day'.
I often do a double making soup and freeze a portion.

The bread was based on yeast. I mixed the dough yesterday before bedtime and left in the fridge till today.
I put the bread in the oven 35 minutes before dinner. I heated the soup in a pot and fried the bacon in a pan. It takes about 5-10 minutes.

Dinner served.

I forgot we had an avocado each at the side. Mostly because the daughter likes them.

Store cupboard/ fridge leftovers. Crab Linguine. 10 minutes. Put on pasta. In seperate saucepan heat olive oil, add chopped garlic, chilli flakes and fry gently. Add grated lemon zest, black pepper and slug of wine/lemon juice. Add small tub/can crabmeat (100gm) heat then a bit of leftover cream. Season and add any fresh herbs (parsley/chives or add dried to previous) sprinkle on top. Serves 2/3. Any old bread toasted with oil/garlic / herbs especially in AF. Obviously need fresh tub or tin of crab. (They say m&s small tin of crab is best tinned but I get Good Tide crab from Sainsbury's chiller about £4.50. )
