@Littleguggi your filo quiche sounds cool. I'm a bit scared of filo as you have to coat each layer and I always make it too soggy? Lol
I do one with shop bought puff but I really need to master filo! X

I melt a bit of butter in a ramekin in the microwave and then brush a little amount onto each sheet and sort of ruffle the sheets a bit. It doesn't need much butter, especially if you don't layer the sheets flat.

Edited tio say - not that you asked me Grin I just saw this and thought I'd share.

Today's food:
B: coffee with frothy cinnamon milk
L: home made spiced carrot and lentil soup with toast, an apple
D: roast mediterranean veg with herby chicken breast
S: some pepper-flavoured water biscuits, rooiboos tea, raspberry and lemon cordial

BobbyBiscuits · 05/09/2024 19:59

@Meadowwild thank you! Great tip, I'll try it. Everyone is welcome to reply to anything I say! 😀 X

Yes I do exactly the same, either melted butter or I used the oil from a jar of sun-dried tomatoes, it gives a lovely flavour as well as colour!

Yesterday I had a bowl of tomato soup at lunchtime, with a bit ofbread. Later I had a salad with loads of coriander, chicken, sour cream and salsa, also about 5 black coffees and a couple of cups of tea all without sugar.

Today I had coffee all day and a few bits of cheese at around 2, went to a restaurant at 7pm and had paneer, curried lentils, onion bhaji, Bombay potatoes and some mango chutney and pickled things with yoghurt. Glass of white wine. Then I got home and ate a slice of crusty bread toasted, overed in melted cheese.
