There are so many posts here about the mountains of washing up and prep in a roast but it seriously need not be much of either. Choose sides wisely! I usually have a lovely mix of veg, but do it in 2 containers. It works whether I amcoomibg for our wee family of 2 adults 1 DC, or if I am cooking for the wider family of 17.

Today, I stir fried red onion, red pepper and tenderstem broccoli. I used a wee teaspoon of juice from my chicken instead of adding oil. I roasted carrots in a teaspoon of butter and tablespoon of orange juice. Often it will be roasted parsnips/ butternut squash/ cauliflower/ Mediterranean veg etc, but it all is just chopped, tossed with a wee bit of oil, seasoned and/or spiced however and stuck in the oven. Or there are the stir fried veg I do, like sprouts/broccoli/ peppers/mushrooms/spinach.

If I make cauliflower cheese, I will make a batch with a whole cauliflower and freeze a few portions, each for 2 people. Some will have broccoli. Some will be broccoli cheese. Today I made dauphinois potatoes from a batch I made at New Year. I made enough for 12, cooked one dish for 6 and froze 2 wee ones for 3 people. I am never going to stand and make something that requires pans and effort without freezing at least a portion.

So some of my roast dinners are no bother at all. Sometimes I will need to knock up a batch of roasties, mash etc, but often all I have to do is the meat. So we can go out for a walk and set the oven to come on and have everything other than gravy sorted for when we walk through the door.

Can I come for dinner please, this week and next? Grin

Mmm sounds lovely. We do this too. Thinking about it, our Sunday dinners are often about a joint, but not necessarily a roast. Though also sometimes steak or lamb chops. There are many ways to eat meat and veg!

I find a weekend roast is just a nice easy meal to cook. Roast some veg and whatever meat and you're done.

Plus I like the leftovers

@BellaJuno today I used paprika, coriander, cumin (seeds) , cinnamon, some garlic, and onion powder, black pepper, salt, chilli flakes, if tight for time I've used the Dunn's River all purpose or jerk seasonings, we have a local Caribbean supermarket but don't Tesco/Asda stores have it. Rub the spices and a little olive oil all over the skin, chop a lemon in half and shove it in the cavity. Pour 200ml wine and 200ml chicken stock into a roasting tin, deskin half/full bulb garlic I like smoked garlic but ordinary is fine put that in the tin and the chicken on top. Cover loosely with foil. Roast for two hours on 150-160.
Take it out put the remaining liquid in a saucepan to start gravy. Whack the oven up to 200+ for 20 minutes chicken back in to crisp.
You can add an extra 100-200 ml liquid at the start and do potatoes in the same tin which is really easy, they're also relatively low fat for rusty potatoes. I don't even peel them, just chop then in halves/quarters depending on size. (I've not done that today though)
Sprouts just get peeled and into food processor to shred , garlic chili olive oil (tiny bit) in a large wok or frying pan , saute for 2-3 minutes just before dishing up.
Steam broccoli, sweet potato mash much the same as usual mash but cooks much quicker and more flavour so only needs a tiny bit of butter not loads, and seasoning.
Make gravy as you usually would but because the juices from the roasting tin have the spices garlic lemon etc, it makes it tastier.

Thank you, sounds delicious!

I don't know if this will help as I don't know your circumstances or what it is specifically that upsets your DM but we've got one of the ninja foodi air fryers with two drawers and you can fit a medium chicken in the larger capacity one, and it takes just under an hour to cook perfectly, and also does amazing roasties in around half an hour.

That's very useful thank you. I have been considering getting one and if mum doesn't like it then I'll keep it

Except it is in your household. Even if you most of the cooking, he should be able to cook for you sometimes.

Bought and roasted a joint of beef for Mother’s Day dinner, then carved the rest of it, portioned it into 2 freezer containers with gravy, then froze it. Defrosted one lot yesterday and did all the trimmings with it, probably save the rest for Easter Sunday now.
I tend to have different meals most Sundays, and buy a roasting joint about 6 times a year (beef, pork or lamb), which I try to stretch out for 2 or 3 roast meals each, so about 15 weeks a year.

mast0650 · 27/03/2023 22:09

We have a roast most Sundays. Tomorrow we're having pork belly, mashed potatoes and kale with cider gravy. Sort of roast but not quite.

Now, to me that really isn't a Sunday roast. Very nice, but not a roast. If any "meat and potatoes" dish counts as a roast, that is an awful lot broader.

MrsDoylesDoily · 27/03/2023 22:28

My DH cooks a roast every single Sunday, even in the hot Summer!

I love it though Blush
