I need to know how to make cheese sauce

You know the one. The really dirty, fattening, unhealthy, vivid yellow or orange cheese sauce. The stuff they coat loaded fries with at Burger King. Or they pour on your non-authentic cheap nachos in cheap takeaways and chain restaurants where "chef Mike" does all the hard work.

Not a proper roux and cheddar with plenty of English mustard and black pepper - oh no that's a cheese sauce in a league of its own - but I can make it without a recipe.

The stuff I seek is probably made with nasty American cheese slices and half a litre of oil, but I don't care. It's a bit of rough and I love it. I just can't replicate it. Bottled stuff is not the one (I've tried all sorts of brands now).

So AIBU or do you have the recipe for me?

I don’t have a recipe. But I’d probably look up ‘nacho cheese sauce’. That should get you what you want.

Never tried it, but I was surprised to see how similar it is to making a ‘normal’ (and more delicious) cheese sauce.

I think out of a packet probably. You don’t get that neon colour and artificial cheese flavour with ingredients 😂

If you can find it in a tin that will be it. I live in USA and we can buy it in tins 🤦‍♀️ don't know how to make it though.

As per your OP, I would probably get some of the nasty cheese-like slices (I don’t think they’re actually allowed to call it cheese) to add to it for that authentic orange colour.

It's a processed cheese, comes In a block & you can melt it to make the exact cheese sauce the op is asking about

Made one myself a few weeks ago after craving this and couldn’t find anything in shops. Years ago you could buy squeezy cheese, the bottle looked like American mustard and it was great on Nachos heated up

I just did a regular cheese sauce but added paprika, cayenne pepper.. dark orange cheese (double Gloucester) and extra mature cheddar (strongest you can find)

It was delicious - it was a case of tasting and adding. Sure it would have been fine to add the processed cheese slices too (id melt in microwave first to get them gooey then add to sauce)

Let it cook for a bit and do it thick

I don’t think that stuff is makable unless you live in the ICI factory. You need a whole lot of chemistry for that stuff.

If you use cheese-like substance (cheesy slices, or ‘American cheese’ if you can get it) rather than actual cheese, that recipe will probably deliver exactly what you’re hoping for.

The cheapest supermarket cheesy slices are made of much the same not-actually-cheese. Hence they’re labelled ‘cheesy’ rather than cheese.

Make roux cheese sauce your mother would be proud of. Add 500g rather orange cheddar and a teaspoon of MSG.

Velveeta always sounds so wrong.

But I love the idea of buying a tin of dodgy cheese sauce!

You can make an incredible dirty macaroni
cheese with evaporated milk. Cook the pasta in it an everything.

None of that fancy macaroni cheese with bits of truffle on the top that seems so popular these days. More like making your own box macaroni cheese.

I’d imagine it does much the same in that nacho cheese sauce recipe (which, incidentally, looks incredibly easy).

Whipping cream and grated cheese of choice. Heat cream; add cheese. Stir until smooth. Voila.
