I need to know how to make cheese sauce

You know the one. The really dirty, fattening, unhealthy, vivid yellow or orange cheese sauce. The stuff they coat loaded fries with at Burger King. Or they pour on your non-authentic cheap nachos in cheap takeaways and chain restaurants where "chef Mike" does all the hard work.

Not a proper roux and cheddar with plenty of English mustard and black pepper - oh no that's a cheese sauce in a league of its own - but I can make it without a recipe.

The stuff I seek is probably made with nasty American cheese slices and half a litre of oil, but I don't care. It's a bit of rough and I love it. I just can't replicate it. Bottled stuff is not the one (I've tried all sorts of brands now).

So AIBU or do you have the recipe for me?

I love Velveeda but so expensive

I was going to ask a similar question but based on the sachet you get in American Kraft Mac and Cheese. This might be what OP needs as well? Is there a way to recreate that sachet?

Grandpa is Bangladeshi and sells MSG. He's not really my grandpa but if you are a regular customer, he is.

He keeps telling me that black salt is better, but ya know

MSG is fine in sensible quantities, B&M stock it some times.
If I could be bothered to harvest seaweed I could make it, in fact have done as am lentil weaver.
@wannarunfromitall everything is good in moderation. Addictive salad is good.

It’s NOT bad for you. Honestly.

MSG naturally occurs in almost all foods. It’s the thing that gives that umami flavour. Parmesan, mushrooms, anchovies, marmite, and sun dried tomatoes are all naturally high in MSG.

It’s the texture it affects (it probably explains it somewhere in the article) - which, in something like Kraft Mac and cheese is probably more important than what flavour is actually there.

Costco sell the exact stuff in a giant tin. It looks like a big tin of paint. I portion it up and freeze it. It's disgusting and wonderful at the same time

This is making me hungry

I still remember my first grilled cheese in the US, amazing! That and tuna melts... all made so brilliant due to Velveeta.

They also have amazing veggie burgers - something to do with different regulations on soy? - top it with some Velveeta....just wow.

Maybe it's good Velveeta is pricey here or I'd be eating it all the time!

I think you need to read the OP more closely…

About 10 years ago Heston. Line that did a TV show called something like “How to make the Ultimate ….” and each week he would explore techniques to cook a certain thing perfectly. One week he did burgers and learned how to make processed cheese, I vaguely recall it involved ascorbic acid powder. Might be on You Tube.

Supersinghs canadian things sell:
Tostitos nacho cheese dip
Lady's choice jar of cheese spread (melt it)
Frito mild cheddar dip
Sometimes I've seen (usually in summer) lidl or asda do American cheese "queso style" chili cheese dip in the fresh dips section.
Anyway if you want yo make it you should be looking for text messages queso recipes nit real Mexican queso.
I've even seen slow cooker recipes for giant pots of it.
Not to my taste now but as a teen I loved it!
