Baked risotto is the way forward.

You don't have to stir constantly, or add the stock in stages. Just fry off onion etc then chuck all in together and leave to cook in lowish heat, with occasional stir to stop sticking to the bottom, then add the cheese at the end as usual. It turns out the same, needn't be a faff.

Or do a baked risotto. So easy - chuck it all in a pan then the oven for 20 mins.

Definitely worth it, we had asparagus and pea risotto last night, bloody lovely! Also try making it with Orzo, bit easier.

Why wouldn't you? I mostly do mushroom risotto and it always has lovely melted cheese in it, usually parmesan.

This is exactly how I do it and turns out perfect every time. I just add some peas about 10 minutes before the end.

Just cheat then. Cook rice following the absorption method then stir in a dollop of cream or cream cheese.
If you want to go the full heathen, use pudding rice. It looks the same but is cheaper.
I'm going to have to name-change now, aren't I? Grin

Some might not, but the vast majority have parmesan in them.
