Risotto is fab. A good home made mushroom risotto is food of the gods.

I make seafood risotto and saffron and italian sausage risotto. Delicious.

I find it therapeutic to make, and it's a good place to hide more veg for DS. Grated courgettes, grated shallots etc.

I'm weirded out by people not putting parmesan in.

That's one of the key features of risotto. Would be like missing tomatoes out of spag bol.

I don’t like risotto very much so I’ve never bothered to cook it. I’ve eaten it as a guest and in restaurants but I’d much prefer to eat rice in the form of a biriyani or rice pudding!

Those who think risotto is tasteless, textureless slop have clearly not eaten a good one. Risotto can contain other foods with a different texture. IMO the key to a really tasty risotto is to add a glass of white wine when you start adding the liquid, and to reduce it down before adding the stock. It makes a huge difference.

Oh I love a risotto, don't often make one at home (but when I do it's butternut squash one) but our local Italian does one made with nduja sausage and gorgonzola cheese and it is divine 😋

I always save the Parmesan rinds for risotto.

And I don't constantly stir.

Made one last night & really enjoyed it. I usually have to sit on my hands to not over stir stuff, so cooking something that likes being stirred was great for me

As a vegetarian, my heart sinks when I see that the only vege option on a restaurant menu is risotto, usually mushroom or butternut squash.

I love it, and here it's a quick meal. 20 mins with little work.
Dp not too keen, but that's because to him rice dishes are a northern Italian thing and we're in the south.
Artichoke risotto, or pumpkin with really crisp streaky bacon garnishing, and way more cheese than any recipe tells you. Perfect.

Very wrong op. Risotto is such a good bowl of comfort food. Our favourite is butternut squash and sage risotto with crispy fried sage leaves on top 😊

Always have a late December risotto with homemade chicken stock from the leftover Christmas chicken carcass. Fry the onions and garlic, add the rice, fry it some more, add a glass of white wine, boil it before adding the stock. I do it bit by bit because I want perfect risotto and not waste my stock. Add frozen peas for the last 5 minutes, cooked chicken, lemon juice, then at the end some butter and parmesan stirred through and leave it off the heat for 5 minutes. It's flipping lovely and my teenagers wolf it down.

I love risotto or any other variation (paella, jambalaya etc) I only put Parmesan in at the end of some varieties. Normally cheese doesn't feature. It's a meal in one pot. What's not to love?

Risotto is lush. I quite often make it in the slow cooker. Fry the onion and rice and then add everything to the slow cooker and it's done in 1.5 hours. Perfect lunch for after a long dog walk on a cold day!

Risotto is great. I recently bought a ninja and have discovered you can make risotto in the pressure cooker in minutes- game changer!

I do a lovely smoked haddock and leek risotto, topped with a poached egg.

Surely cheese depends on which risotto you're making.
