Risotto isn’t worth the bother

So much stirring for what? There’s easier ways to get cheese into your mouth

Risotto is just wrong.

Gloopy, soggy, glutinous and ick. A waste of good ingredients no matter how good the chef.

I love risotto, but never do the slowly adding stock and stirring thing. I do fry the rice, add a stock pot with the first lot of water and then stir occasionally when it is looking dry and add a bit more water out of the kettle as it needs it. Then a bit of cream or philly at the end. Not authentic, but then neither is adding roast butternut squash, so shoot me

You don’t need to stir all the time, just when you add the stock. Ina Garten’s butternut squash risotto is a thing of beauty.

cant recommend a Wonderbag enough - inert slow cooker. It makes the most delicious risotto with no effort at all.

Can't stand risotto, purely because I'm veggie and have coeliacs, so it's every restaurants/caterers lazy way of providing me with me a meal 🙄

You don't have to stir constantly, or add the stock in stages. Just fry off onion etc then chuck all in together and leave to cook in lowish heat, with occasional stir to stop sticking to the bottom, then add the cheese at the end as usual. It turns out the same, needn't be a faff.

I agree. It always works for me this way.

Good risotto is always worth it. I always make mine by stirring and it is always well worth it, It's not that long and you can listen to podcasts and drink a martini while you're at it.

And you must make at least triple the amount you think you need because people always eat more, and then you make arancini. And your life is perfect.

I'm not a fan of risotto. It has been cooked for me a few times years ago but I would never request it or order it at a restaurant. If anyone served me it then I would eat it to be polite (& just be thankful for a free meal!).

I can't believe there are people here who are surprised by Parmesan or pecorino in risotto - even if you don't have it, surely you know it's a common addition?! And delicious!

YANBU risotto is so overrated. I've probably never had a good one, seeing as many people think they're to die for. Every mouthful the same boring consistency. Even if it was tasty, I lose interest quickly.

Risotto is wonderful. Swap the cheese for garlic and you're onto a winner.

Yes, make double then make arancini but cool the leftover quickly and keep it in the fridge.

Parmesan is often added to an authentic risotto
DD makes a brilliant butternut squash risotto. She finishes it off with fried age leaves. Delicious.

Yes, cheese in risotto. I’m eating it now and it’s slurpy comforting and nice, I’m home with the lurgy and that’s what I wanted.

DH hates it, boring one texture slop. He’s not that keen on pasta either…unless it’s spag Bol with garlic bread….

This is kind of what I do. I add most of the stock, let it cook then decide it I need a bit more in the last 5 minutes.

I wouldn’t order it but would politely eat it as a guest. I cook oven baked risotto from BBC Good food website for my family occasionally, usually when I’m planning to be out or eat something different.
I don’t like rice much.
