Roasted with olive oil, salt and pepper for 10-15 mins on high

It’s freaking amazing and I never knew little trees could taste this good!

Roasted broccoli and sprouts are delicious.

I recently found a recipe online for broccoli and I've eaten it loads: slice tenderstems in half lengthways, fry off in olive oil for a few minutes before adding salt, garlic and a squeeze of lemon juice. Shave some pecorino or parmesan over the top on the plate. It's amazing, so fresh and amazing as a side.

That crispy seaweed that you get at Chinese restaurants is fried shredded cabbage with a sprinkle of sugar.

I would love to eat roasted broccoli but unfortunately I can only eat it boiled to death otherwise it gives me the worst stomach cramps, wind and indigestion in the world. Can't even stir fry it. It sucks because I love it. YABU for dangling the idea of delicious crispy broccoli before a poor unfortunate like me Grin

@Furtherdownthespiral I am the same. Cauliflower is a killer for me. I love it, but I just can’t eat it without getting painful cramps and a night of floating the duvet by wind power alone.

I stopped eating broccoli also because of those little caterpillars that curl up tight and hide in the trees. Shudder.

I've been roasting most of my veg, including broccoli, for over 25 years now. It started with a Delia recipe and I haven't looked back. It's easy and tastes amazing.

I also oven cook bacon and sausages.

The Delia recipe is broccoli and cauliflower roasted with garlic and crushed coriander seeds. I rarely cook it now, but broccoli roasted with garlic oil is lovely.

Also cut the broccoli 40 mins before cooking to allow all chemical reactions to complete before the cooking process starts. This keeps in the nutrients even if boiled and microwaved.

Roasted cauliflower on top of curry is fab. Roast with crushed coriander seeds and garlic.

Yep, I roast most of my vegetables now, they last a few days in the fridge as well - big batch at the weekend. Cumin seeds go nicely, and a bit of harissa mixed in 5mins before they are done takes it to a different level.

I roast carrots too, and beetroot.
Obviously parsnips must always be roasted

You definitely don't need to!

I usually warm the tray while I'm chopping up the veg (it permanently has olive oil on it) then depending on how much olive oil is already there drizzle/pour some over the veg. I also have a silicon brush which I use to coat the veg (with the slightly warm
oil. But you can just Chuck freshly chopped veg onto/into a baking tray/dish and drizzle/pour/spray olive oil over them.

I like the taste of the veg so don't usually use spices/garlic etc, but many do.

How do you roast a whole cabbage? Wrap it in foil? I have a cabbage to use today.

I have a glut of broccoli after an online shopping glitch (not upset, possibly showing off) and DH and I were just standing in the kitchen discussing the best way to have it for lunch - it was going to be InstantPot soup, but roasted might be the way ahead.

About stomach issues - I’m sure I remember something about enzymes and gut bacteria being based on what you usually eat. So, if you eat sprouts once a year your body might struggle with breaking them down, hence a lot of wind. The only answer is to eat beans and veg regularly so your body is ready for them. Anecdata - my stomach deals with half a head of roast cauliflower without a whisper.

Roast broccoli with a bit of sesame oil as well as condiments of your choice. It is delicious.

How do you roast a whole cabbage? Wrap it in foil? I have a cabbage to use today.
If it's a drumhead/white cabbage, freezer coleslaw is good and keeps well (you don't have to use up the defrosted amount within a couple of days).
