"Massive salad"

I see it here all the time, it's the new mythical mumsnet chicken I think. In the recent lovely (and not so lovely) weather I've been eating a lot of salad, but I really want to know what other people think is a 'massive salad'.

So, AIBU to ask when you make a massive salad what you put in it and how much??

Today I had thinly shredded iceberg lettuce, cherry tomatoes, spring onion, radishes, sweetcorn, cheese, ham and Caesar dressing.

My massive salad:

  • 500g+ of new potatoes (still warm)
  • 250g+ of cherry tomatoes
  • 500g+ of green beans (still warm)
  • 500g fried halloumi
  • a good glug of olive oil
  • a smaller glug of red wine vinegar
  • 50g capers
  • 200g olives
  • 2 red chillis
  • masses of fresh dill and mint


Serves 3-4 people.

It's my favourite salad. As my brother says: "of course it is, thunder, it's basically cheese n veg, innit?" Grin

Not a big salad fan but a "massive" salad implies it would be a full meal rather than just a side dish. So it would need potatoes (pasta if that's your thing), a couple of types of meat (chicken and bacon maybe), lots of cheese, croutons or salad grit, sauce and so on. Plus some actual salad bits like lettuce and carrots. Probably with bread rolls and butter.

I would say if it's not big enough to soak up a bottle of wine then it's not a "massive" salad.

I had salad for lunch.

Dinner plate of Mixed leaves, handful of cherry tomatoes, green olives, grated carrot, red onion, cucumber, cottage cheese and two hard boiled eggs.

What I love about this thread is it's turned into a salad inspiration thread. Smile
I love salads and am pleased that there's other mumsnetters who enjoy a good plateful of salad and not a mumsnet massive salad that's actually 3 lettuce leaves and half a chicken breast.

I just popped back to see why this thread is always at the top of my active list and am amazed by the turn it’s taken. Am happy to be amongst so many others who are massively invested in having massive salads.

Annoyingly, I can’t sleep tonight. I’m not hungry and I don’t have the ingredients but by golly I’m now craving a massive midnight salad.

Iceberg lettuce
Rocket
Raw garlic
Cadburys chocolate buttons
Cherry tomatoes
Sweetened condensed milk
Crumbled shortbread (All butter shortbread)
Parmesan shavings
Pitten green olives
Stoneless white grapes
Potato salad
Raw onion
Sweetcorn

Mix it all together so that the chocolate, condensed milk and garlic cover all the lettuce leaves uniformly. Might sound crazy, but its juicy, crunchy, sweet, garlicky and filled with chocolate surprise. Mmmmmmm!!!!

I've finally remembered to buy a pomegranate - and I have Halloumi cheese in the fridge so today I'm going to make pan-fried Halloumi with warm pomegranate seeds (bunged in the pan with the cheese) - and up-ended over ready and waiting green leaves. Plenty of black pepper.

I'm the only one who likes this in our house.

Akin to a niscoise so proteins, variety of veg inc lettuce, tomato etc. Maybe grains if you like them.

This thread gives me joy. Having just finished cancer treatment I'm restricted to eating cooled white rice and it's a long time before my bowels will accommodate a raw vegetable but when they do I have a wealth of delicious big salad inspiration here (even if it's the depths of winter!)

Mmm love salad, love these ideas. If I’m in a rush, my favourite instant dinner is - bag of Sainsbury’s Caesar salad mix, and I buy some tuna (the John West no drain chilli and garlic one) to go with it. Mix it all up in a big bowl. So good!

If I have more time - mixture of rocket, lambs lettuce and watercress. Sliced radishes and cucumber, halved cherry tomatoes. Dressed with olive oil, lemon juice and salt. So delicious! If I want to add protein: cubed feta, some fried halloumi slices, sliced hard boiled egg or leftover roast chicken tossed in.

A ‘massive salad’ is my favourite meal - love the ideas on this thread!

Love the photos of salads. They’re in the vein of what I might mean were I to use the term.

When I or my DH make a chicken Caesar salad for dinner we serve it in a huge pasta plate, 12 inches across and 2 inches deep, and we just have a fork each and share, eating it straight out of the serving dish. 🙂 I thought I had a photo for illustrative purposes...but I don’t.

It’s always got at least two chicken breasts, sometimes more meat than that if we’ve got a (Mumsnet) chicken to use up. Usually two heads of romaine lettuce, plus plenty of dressing, plenty of croutons and plenty of Parmesan. It does us both nicely. Sometimes DH will have crusty bread with it but I try to avoid that as bread is like crack to me. Sigh.

I still can’t be bothered to list out the ingredients to a typical ‘everything raw that’s in my fridge’ salad - LAZY - but they usually have 8-10 different veg plus a good amount of protein. They are really tasty and very filling. I do eat salads because they’re healthy but I also eat them because they’re delicious!

I usually have spinach, boiled egg, some kind of nuts, avocado, tomato, olives, chicken or salmon, dressed in olive oil and salt, and sometimes I’ll add a blob of goat cheese or burrata.

I really fancy an apple, walnut and Roquefort salad today! I’ve got the cheese but sadly the apples were misappropriated to make a tarte Tatin at the weekend. Sigh.
