You could always give the old fashioned 'take it' or 'leave it', as the two options. My philosophy was I got the choice what to put in front of the tube. They got the choice as to what got put down the tube. If they refused any and all offerings, then there was always a piece of bread and butter, a piece of fruit, a glass of milk, and an early bedtime, because obviously they'd be tired. . .
Good for you and anyone else who chooses to live like that. I choose not to. When my eldest DD was still at home, I could end up doing 5 slightly different versions of whatever I was cooking to accommodate everyone's genuine likes and dislikes (not stuff they liked last week,but claimed not to this week).
DD1 is pretty easy going, as is DD2. They will eat all vegetables, but DD1 would only eat chicken or processed meats due to glue ear... DS will eat most veg, but not peas. DP hates all veg except peas. DS will not eat anything with gravy. DP will not eat pasta, tomatoes or cheese.
So, in cooler weather, I will make a cottage pie, pull out some of the mince and onion and add it to pasta, with some peppers and herbs and passata, smother it in grated cheese and everyone's happy. Not much effort really.
Tonight, I will boil some potatoes, possibly eggs too, drain, leave them on the hob and everyone can help themselves to the bits they want for salad. DS won't eat potatoes unless they're roasted, so he'll do himself a 2min microwave rice to go with his. Even easier now they're older!
