We had quite a big family lunch today in the garden so for dinner I made egg fried rice with bacon, peas and sweetcorn.

I'm loving the smell of the frying chicken for DH's chicken casserole, which is chock full of veges, and served with rice, we haven't had it in ages. . .

This sounds incredible. I really want to try 2 meat-free days a week. If you can, please let me know how this went and where I can find the recipe. Smile

Sausage casserole with chorizo style sausages, mash and green beans. A bit basic, but we are both worn out after a busy weekend and it was nice and easy to throw in the slow cooker.
Veggie Bolognese tomorrow with Quorn mince with some lentils added and the usual veggies added in. Again, boring but we are trying to clear out as much from the freezer as we are going away for a couple of days.

Roast dinner here! We had beef brisket today, which is something we don't have very often. Was very nice.

The sun came out today for the first time in a while so we bbq'd a spatchcocked chicken (rubbed with piri-piri spices) and had this with Greek-style brown rice salad, corn on the cob and tzatziki.

Spaghetti last night. I had forgotten I had a kilo of minced beef in the fridge so I quickly cooked it with tomato purée, 1 can of tomato and a dried oregano. I’ll get some veg today, sauté that and add to the rest of the beef, should get 2 more meals that way.

I'm tossing up between savoury lamb chops casserole and veges, or bangers n' mash and veges.

It was going to be meatloaf, but the girls just cannot be converted to be meatloaf lovers, and it therefore seems a bit mean on second day of school to whack them round the head with meatloaf. Plus, eldest daughter has ballet tonight, which kind of snuck up on me.

Oh @mbosnz was it you who asked me for my meatloaf recipe on another thread? Apologies, I tend to lose track and forget to get back to people...

As it happens I don’t really have a recipe as such - just do it by eye/feel.

I use bread and egg as the binding agent as opposed to bread crumbs.

For 500g of mince I use a big onion, grated. One big slice of bread, crusts cut off and cut into small dice. Add the bread cubes into the grated onion and leave for 5-10 min so the bread absorbs the onion juice and starts to break down. Add minced beef and one large egg and mix until well combined. Plus a generous amount of Parmesan (if desired), some olive oil and whatever combination of dried herbs you like - I use oregano, basil, parsley and thyme. Season well, form into small loaves or one bigger loaf and bake. You can just multiply it for bigger quantities.
