Seriously stuck in a food rut at the moment and I’m so uninspired I’m rarely cooking a proper meal.

What’s on the menu in your home tonight?

Mutter Paneer with naan bread and rice with dahl. Quite surprised that few are having a vegetarian dinner.

PrivateSpidey · 30/08/2020 17:46

Macaroni cheese with some roast veg (squash, red onion, peppers). Took some stewed apple out of the freezer so made a crumble with that and some plums. Weather is feeling a bit autumnal here so making autumnal food!

TheHappyHerbivore · 30/08/2020 17:48

Tonight it’s pea, lemon and pesto risotto with homemade focaccia and garlicky pangrattata. Cant wait, but the focaccia is only on its first prove!

dementedma · 30/08/2020 17:48

Paella. Done in the slow cooker! First time attempting this so dont know if it will be edible or not

Thomasina79 · 30/08/2020 17:52

We had beef casserole which I had pre cooked in the slow cooker with a tin of soup Yesterday and then bunged in the oven today with dumplings. We had buttery mash and green beans with them. It was lovely!

justaweeone · 30/08/2020 17:53

Just made some pizza dough

Thomasina79 · 30/08/2020 17:53

I would be interested in people’s slow cooker recipes. I use mine loads, but I think they are a little out of fashion now?

PeraltasWife · 30/08/2020 17:58

Chicken casserole with veggies from the garden and some homemade bread

justaweeone · 30/08/2020 17:58

Forgot to say would have made this one but needs 24 hours
It's amazing, just like Dominos

Lazy meal today... Some bolognese type thing from a batch cook in the freezer (minced beef, tomatoes, etc) with fusilli, and a spinach, avocado and olives salad.

FallonsTeaRoom · 30/08/2020 18:09

Fresh corn on the cob with oodles of butter and black pepper. Sirloin steak with chips, mushrooms, onion rings and peas. 😋

Veggie Sunday roast here! Roast potatoes, carrot & cumin mash, Yorkshires, Linda McCartney sausages, gravy and red cabbage. Can't wait!

TinyTickler · 30/08/2020 18:37

Tomorrow we'll have coconut chicken curry soup using stock from the chicken / leftover chicken.

@Thomasina - this was a recipe in the latest Good Food Magazine. it actually wasn’t bad at all but I think next time I will just flash fry the prawns at the last minute and add them as I serve. They were a wee bit rubbery. Otherwise it was very nice.

This is Mumsnet, what are you making with the left over chicken for the rest of the week?
funnylittlefloozie · 30/08/2020 20:02

@dementedma, thats good to know - i saw that recipe as well, and i'm planning to do it next week. I'll hold off on adding the prawns until the end.

We had coq au vin tonight, also from the good food magazine. It was DELICIOUS!

AdoraBell · 30/08/2020 20:04

I did one of those potato and bacon packets with spinach and fried eggs.

daffodil10 · 30/08/2020 20:09

We had a home produced leg of lamb cooked in lemon and garlic. With home grown potatoes broccoli and green beans.

Igglepigglesgrubbyblanket · 30/08/2020 20:09

Fish fingers, chips and peas... Not very inspiring I'm afraid!

Gottheteeshirtandlostit · 30/08/2020 20:11

Just downloaded Mealime app as am also in a rut and it seems quite good.

nokidshere · 30/08/2020 20:14

I'm having a takeaway because it's only me and I cba to rummage through an almost empty fridge to find something to cook. DH is having mackerel with some lentil/beans thing he's chucked together because he doesn't do takeaway!

Gottheteeshirtandlostit · 30/08/2020 20:15

So fed up of thinking what to eat all the time. Made M&S lamb tonight with potato gratin, cabbage and kale to clear to out the fridge. Plus apple crumble from windfall apples. Was lovely but DD about to come home from work and she's veggie and lactose intolerant so still not done - probably she'll have potato waffles and spaghetti hoops.

ILoveTeeeeeea · 30/08/2020 20:16

Crisps & dip, ribeye, fries, asparagus, corn on cob, salad, devilled mushrooms, plenty of wine and then treacle tart and ice cream- I’m literally stuffing my face tonight (we don’t eat much in the wk)
