Seriously stuck in a food rut at the moment and I’m so uninspired I’m rarely cooking a proper meal.

What’s on the menu in your home tonight?

Chicken thighs and drumsticks in shop bought marinade, whole roast baby potatoes, corn on the cob and salad here. It was alright...didn't do a great job of the chicken, which was disappointing as it was Duchy organic stuff. Ah well.

I also love autumn food! I also love autumn clothes, although it was positively balmy here today. It's such a lovely time of year. The nights aren't too long and the weather isn't too cold, but I can still enjoy a hot chocolate or a crumble, stews, soups and a walk through the leafy park with my jacket and knee boots or a big scarf. Best of both worlds. I also love spring.

I've got a migraine so we've got easy food tonight - chicken kiev, oven chips, peas and sweetcorn.

If it helps for inspiration - last night we had spaghetti bolognese, the night before chicken and chorizo rice full of onion, peppers and courgette.

mbosnz · 03/09/2020 20:26

Teriyaki marinaded salmon on udon noodles, with stir fried vegetables ( pak choi, snow peas, baby corn, courgette, red and yellow peppers).

It's the eve of DD16's first day back at school and first day in 6th form, so it's her pick.

Duck breast with a honey glaze, tenderstem broccoli and asparagus.

Sounds fancier than it actually is.

BigBlondeBimbo · 04/09/2020 14:11

Inspired by the talk of autumnal soups on this thread, I have made a huge pot of lentil and veg soup today. Going to have some for early dinner / afternoon tea type thing, before I go out this evening. Won't be home till almost bedtime for me, so probably won't eat again, except maybe some nuts or fruit before bed.

Pomegranatemolasses · 04/09/2020 14:15

This but using chicken instead of beef. It's yum.

Some fresh soup : leek, potato and onion from the garden. Still growing now, but I will go out around 5pm, lift them up, shake the soil from the roots, chop the excess foliage away then bring them inside. I love preparing the food as much as eating it. After cubing the potatoes, I will gently fry them in butter, not too much, just a little will caramelise the edges and produce more flavour. Add some water. The leeks I cut up with the knife about 30 degrees diagonal to the stem. That approach seems to stop those long, ragged strands from emerging than if I cut directly across the stem. Throw the leeks on top of the 'tatoes, then dice the onion up last and throw on. Let it simmer and splut well, before removing and mixing together with seasoning. I then throw a small glass of sherry or IPA in - not much, just a tot. Then continue to stir and blend down with the spoon, to a low heat. Delicious with some croutons from a little packet that appears above the lettuces and rocket in the chilled salad section of the supermarket. My croutons are generally too soggy.

@ I just wanted to say thanks for that delicious chorizo risotto recipe. I’m lazy and didn’t even bother roasting the peppers, just fried them with the onions, but it was one of the best meals we have had in a long time. Will definitely be a favourite in our house from now on!

ZooNaNa · 05/09/2020 14:19

I’m making that crispy chilli chicken tonight! @Pomegranatemolasses - looks delish

mbosnz · 05/09/2020 16:58

Tonight it's marinaded lamb racks with a red wine jus, with mash, roasted parsnips, pumkin and kumara, beans, asparagus, brussies, broccoli and carrots. Oh. and Leek.

Smoothyloopy · 05/09/2020 16:59

Pasties, home made

alangarneristerrifying · 05/09/2020 17:06

Squash and quinoa chilli in the new slow cooker. The recipe uses butternut squash, but I have a different kind (not sure what), and green peppers which I had to replace with courgette, but hopefully it will taste good. Feels very smug to have made dinner already, I'm looking forward to it.

HoneyBeeGood · 05/09/2020 18:00

Baked Camembert with a selection of sliced peppers, cucumber, celery and toasted sourdough bread with enough wine to make me forget a shite week!

AdoraBell · 05/09/2020 18:04

Chinese style belly pork, stir fry veg and packet rice.

Lockdownhairdontcare · 05/09/2020 18:37

Chinese takeaway 🥡

TulipsAndLilacs · 05/09/2020 18:49

Steak and ale pie with bubble and squeak mash, red cabbage and gravy

BigBlondeBimbo · 05/09/2020 19:06

Might float the idea of takeaway with DH this evening. Kids are having sandwiches in front of Cars 2, (I know, we are terrible parents, but it's a one off. I fell asleep this afternoon, dh took the kids out and there was nobody here preparing dinner as I was like this 😴🛌). Ah well. It is weekend!

MotherofPearl · 05/09/2020 19:28

Takeaway here tonight - curry. Can't wait!

Evennow · 05/09/2020 20:28

Spanish omelette, home-made coleslaw, tomato and beetroot salad.

Ninkanink · 05/09/2020 20:42

An afternoon of resentment with a side of rage... Grin

I’m so grumpy I’ve decided not to bother to cook or eat this evening. DH is making noises about a takeaway curry.

mbosnz · 06/09/2020 10:32

Oh dear Ninkanink. . . do you want to vent your spleen?! Did DH get takeaway for you both?! (There's a thread going on about what people serve as revenge dinners - it might give you some ideas Grin

Ninkanink · 06/09/2020 11:45

He got a pizza and offered me some but I refused. So he knows I’m pissed off.

mbosnz · 06/09/2020 14:29

Oh dear. You'd best get to the 'revenge dinners' thread. I believe that meatloaf is in the lead. . .

Ninkanink · 06/09/2020 14:33

Heh. As it happens I make a great meatloaf which my DH much appreciates, so that’s no good.

It’s alright, it’s not actually him I’m angry with. I’ll have worked through it by tonight, I think. Plus I’m incapable of refusing pizza twice in a week and there’s plenty leftover....
