To think no one is stockpiling fucking aubergines

I know it’s not a big deal. But we’re shielding DD so getting food deliveries and it’s such a pain in the arse only being able to order 3 of anything.

I understand for high demand items it might be necessary to limit items but surely some common sense should be applied?

I got a large aubergine in my veg box this week so I'm making a roasted aubergine and tomato curry tomorrow.

No shortage of aubergines around here. DH has bought some today and also last Saturday from our local fruit and veg stall.

I love them in Thai yellow curry, ratatouille and baba ganoush but haven't tried them in much else.

I like my moussaka to be made for me.

Sort of off topic to me but that "burnt aubergine chilli" recipe has just one aubergine but:
70g puy lentils or green lentils, rinsed
30g red lentils, rinsed
400g can kidney beans
AIBU to think it's mostly pulses and a bit of aubergine for flavor? I am not into beans etc so was enthusiastically looking forward to it based on the name, now I've read the ingredients not so much.

It’s mostly vegetables, a small amount of lentils. It’s really worth making.

Sadly the aubergines I’ve got have been earmarked for baba ganoush. But maybe next time.

@agonyauntie2020 the aubergine adds a fantastic base flavour to the dish and I'd agree with other posters you don't notice the lack of meat in the dish. It's one of mine and DH favourite dinners (not DD though who hates anything with chilli so I can now add extra to this, as the recipe doesn't add enough)

Last time I cooked with aubergines you had to salt them to take out the bitterness.

I have four aubergines :) They're destined to become brinjal pickle some time in the next few days. Until then I shall just stroke them lovingly.

None of the modern varieties need salting
in summer I cook mine straight from picking

brushed in olive oil, grilled and then slid into passata and topped with parmesan then grilled is probably the very very best

Not helpful to you op but they sell aubergines in my little local shop which I find strange. The fresh fruit and vegetable selection there isn't huge so it seems an odd one to include. I used half of one and chopped the rest up and froze it. They seem to keep well in the freezer like that just FYI. Not stockpiling them though!

Yuk. Not feeling the aubergine love at all. They taste vile.
Nothing really in short supply here in Scotland although struggled to get digestive biscuits, oddly enough. have plenty of flour, eggs etc

We got two from Tesco's last night. I made a layered involtini for us & my DM.

Nigella Lawson's recipe (of course!) but instead of slicing, filling and rolling, I cube it, roast it, and layer it all up.

I arfed at the 'black vegetable market'.

I adore aubergines. I feel they need lots of oil and to be cooked until they're very soft.

I have a box full. Cash and carry special. They are fabulous. Baked whole, scoop middle and blend with chilli, olive oil and coriander. Mmmmm
