Gas or electric hob? And why?

Which do you prefer? Which is better? For cooking, cost, environment?
Previously I've always had electric, DH gas. When we moved our house came with a rangemaster which had electric oven but gas hob.... it's about to give up so looking at new ones. I'd like to go all electric but DH isn't sure!

We had power cuts during the storms so being able to cook, make cups of tea etc is useful. (I always keep a box of matches for cooker and candles)

We love our induction hob. We did have to get new pans though. It heats up really fast so took a while to get used to and not have stuff boiling over or burning on the bottom.

I absolutely love the ease of cleaning. A quick wipe and it's done.

Having had all 3 in different houses, DEFINITELY induction. Clean, quick (and a bit exciting in a space age way!)

Another for induction. Was annoyed when I moved in as had to buy new pans and I thought it’d be slow to heat like my electric hob. But no, it’s excellent, fast, and wipes clean.

Another vote for induction. It is cleaner and safer than gas and more precise than electric

Induction.
It boils water down fast!
Really easy to clean (and manufacturers cookery demo advocates putting a tea towel under the pan /over the hob for splashy things - has revolutionised reheating thick lentil soup!

Only had to replace my wok as all my other pans were fine.

I've had both gas and ceramic in the run up to this. Prefer induction.

@dressingdrown is ceramic really bad? I want to go for induction but it's double the price of ceramic on the range I'm looking at.... I'm thinking in the long run tho I won't regret it?

If you're set on a range that will limit your options and if you don't want to pay for induction, I'd probably go for gas over ceramic and make sure your DH cleans it at least half the time.

The previous owners of our house put in both induction and gas, which I really love. I've got some pans (eg an old style wok) which wouldn't work on induction, and gas still gives a fiercer heat for stir frys and so on, but most of the time induction is great.

I love love love having both but if I had to choose I'd still go gas I think as its still more versatile.

@icecreamsundae32 ceramic just doesn't have the rapidly controllable power of induction.

I can put a pan of cold water on my induction hob on max (boil) and it will be boiling quicker than if I had used the kettle.

Then when I want to summer I can take the heat down rapidly.

Ceramic isn't that controllable. I used to move the pan between two rings for delicate stuff...one on hot & one on cooler....

Both my induction & the last ceramic hob were fairly new Siemens products so I don't think I had a poor example of a ceramic hob.

Set fire to my top years ago when I was cooking with gas and not paying attention. Definitely feel induction is so much safer especially if you have kids.

Gas hob all the way. Electric oven. Although a ceramic hob is easier to clean Grin

I think people are over thinking the cleaning of a gas hob, it's a wipe over with CIF and occasionally put the pan supports through the dishwasher. In the scale of all the other things that need cleaning it's hardly extreme. OTOH I would go for induction if buying today as opportunity to use renewable energy in future.

ceramic is simply not comparable. You will regret it in the long run.
Induction also uses lot less electricity than ceramic, as it only heats the pan itself, not the hob. It's also of course therefore a lot safer - normal ceramic hobs stay hot for quite a while. Induction will not, you can touch it immediately after cooking. and due to that, you also can't control the temperature the same way, it is not as responsive. With induction you can go from Boost to keep warm in a second.

Can you make gravy on an induction hob by putting the roasting tin on the hob?

I assume only if I buy all new good quality flat roasting tins? All my existing ones seem to have warped to a greater or lesser extent.

Absolutely. I do all the time. The flatter the better, but my tins are old and beaten up and work perfectly well.

Like pans, you would just need to make sure that the tray is cast iron or steel. Any decent weight tray should be solid enough as long as it is not aluminium.

Much prefer electric. The only advantage is they are working in a power cut. Still wouldn’t want it tho.

This is really the dream pairing since I mostly do Asian cooking and flame-grill as well. How did you have both installed?

Which induction hobs are people getting and do you have to have a special electrical supply/cable like you do for an oven, as I know some are higher power than others?

Yes we needed new cabling for ours. It was no hassle as we were getting the whole kitchen done anyway.

My hob is a neff and was about £600 I think but there are a wide range of prices.
