Gas or electric hob? And why?

Which do you prefer? Which is better? For cooking, cost, environment?
Previously I've always had electric, DH gas. When we moved our house came with a rangemaster which had electric oven but gas hob.... it's about to give up so looking at new ones. I'd like to go all electric but DH isn't sure!

I can categorically state that I would never have anything but induction ever again. What's not to like - fast and safe, as the hob itself does not get hot. Mine also has flexible heating area, so you can use any size and shape of pots and pans, and it heats automatically the appropriate area.

Oh yes the 'you need to throw all your pans away' is not true. Almost all pans work on induction (last I checked, IKEA for example had just one single pan that doesn't work, all the rest are fine.)

Gas hob. Ask a load of chefs and I am sure the majority would say gas. The advantage is the instant control and that you can see the flame, so you know the effect it will have. Induction is okay, takes some getting used to. Electric hobs are awful, slow, unresponsive..

Cleaning is a disadvantage of gas, but not necessarily a major issue, as if you are not a messy cook then it's just the hob surface that needs a wipe for spills, the other bits should not need disassembly and cleaning that often. In a professional kitchen it would be done daily at the end of service, but that's after 8 to 12 hours of constant use, or a bit less if done twice daily between (lunch and dinner) service.

One other advantage of gas is the big gas ring you can get when you want a massive flame for woks etc.

I am always a bit disappointed when a rental property or a self catering holiday rental has an electric hob... Induction I can live with, gas = happy days.

Gas by far. I have never had any issues keeping it clean either.

Induction is okay, takes some getting used to

It also depends on the type of cuisine. Precise control of the flame isn’t essential to most types of cooking but if it is, you will be a little disappointed in the touchpad. Seeing the flame with your eye is an advantage as is controlling with a knob.

I do think pastry chefs prefer induction for melting/boiling but most chefs seem to stick to gas ime

I'm going to get an induction when we replace ours (currently ancient and awful electric). my preference would be (3) electric (2) gas (1) induction. and an electric oven obv.

You have to keep your pacemaker at least 60cm (2ft) away from the stove top of an induction hob.

Gas cookers are being phased out. I think it's 6 years for new builds.

Regardless I'd still choose induction.

adaline the gas rings always get marked with our gas hob and are hard to clean.

We are looking at whether to get an induction hob as our gas hob is getting a bit temperamental when you turn it down low the flame sometimes goes out after a while so need to keep an eye on it all the time. It is serviced every year and we are told there is nothing we can do about it. So we need to replace it.

Gas , can regulate the heat better .
Induction for me would mean having to buy all new pans also would mean not being able to use the hob if we had a power cut

I've always been a gas person, wouldn't ever entertain the thought of using electric. Until I used my parents new induction hob. Omfg it's amazing, quicker, more adjustable etc etc, just plain better tbh

What are people cooking with if none of your cookware would work on induction? I only had to get rid of one aluminum pot, steel/cast iron all works fine.

Electric the cleaning is fast and easy. Gas always has a grimy little bit even in the best cleaners homes 😳🤢

Induction is very quick and very clean. Most pans will work on them these days. I've had 3 over the years as well as gas and ordinary electric. I've just had a new kitchen with induction and it's got timers, so I can have it turn off if I want !
