Gas or electric hob? And why?

Which do you prefer? Which is better? For cooking, cost, environment?
Previously I've always had electric, DH gas. When we moved our house came with a rangemaster which had electric oven but gas hob.... it's about to give up so looking at new ones. I'd like to go all electric but DH isn't sure!

Induction does not take ages to heat unless you're using the wrong type of pan. A magnet should stick firmly to the base.

If you look at any cookery show on TV, they're usually using induction.

I have mine for 10 years, still looks great and I use a lot of Le Creuset pans, they haven't scratched it. It also has an automatic shut-off response if a pot boils over, very handy.

Definitely induction. Just as controllable as gas and far easier to clean.

Really want a gas hob. Have had electric ones in all the places I've lived as an adult.

  • it's much easier to change the heat on a gas hob, it warms up/cools down much more quickly.
  • it works in power cuts, so you can have hot drinks/food.

But horribly expensive to get one fitted, even with gas already in the house for the heating system.

Gas for sure. If you like Asian-style cuisine, the results are so much better with gas powered hobs. Also, if you like to flame-grill things ......

I much prefer a gas hob, as PPs have said, more control, doesn't take a age to cool down when you turn the heat down under a pan. Unfortunately we are all electric here, so no choice but to have an all electric cooker, which I hate.

Gas hob and electric oven. Would never have it any other way, but that's probably because I live quite rurally and we get lots of power cuts so at least with Gas I can still boil water and heat soup etc.

Gas is my go to, better heat control, immediate. Only downsides are the environmental issues and can be annoying to clean. Electric oven is the best. So maybe you can meet halfway?

I've got a single ring gas camping stove so I guess I'd take that out in case of a powercut. (Bought for camping, not specifically for powercuts!)

I think logistics are the reason, not because they produce better results. The serious cooks I have known prefer gas; induction is for table-tops only!

Induction or electric. They are a million times easier to keep clean than gas ones.

Gas for me. Which will be annoying when they ban it for environmental reasons in the future, as I really, really dislike using electric hobs or, as I have been lumbered with in my house, a built in electric oven. I managed fine with my Grandfather's range, though.

Induction is amazing. It is instant like gas and cools down almost immediately. I wouldn't use anything else.

It depends a lot on the sort of cooking you do. Induction hobs look great and are easy to keep clean but if you like to cook at high temperatures (searing steaks, deep frying or wok cookery), they often have a safety cutout just as the pan starts to reach optimum heat. You also have to buy a flat bottomed wok which aren’t as efficient as traditional ones. Ceramic hobs look nice but are slow to heat.

Gas hobs are harder to keep clean but are much more responsive to use. There’s also no problem heating a cast iron pan to the heat needed to get a good crust on meat.

All that being said, I think the benefits of gas only apply if you have gas piped into your home. If you rely on bottled gas IME it isn’t as good. I’m switching from bottled gas to a ceramic hob in our holiday home because I’m fed up of the regulators developing faults or the pressure dropping. Ceramic might be slow but it’s reliable.

I have used gas, electric and induction and prefer gas by far.

I like the way, as others have said, that it is instantly responsive. When you see a pan is about to boil over you turn it down and it doesn't boil over. With electric it does boil over. Also electric takes so long to heat up.

I used induction in a holiday cottage and wasn't that keen. I was expecting to love it having heard people rave about them but I wasn't impressed.

We have an electric cooker and gas hob. Also in a power cut we can still boil water for a drink and cook something.

Where we live now doesn't have a gas supply but we have the hob connected to calor gas bottles. We had electric (already in house) but after a week it was driving me mad so DH sorted out the gas hob

I'm interested also OP. Please would people saying they prefer gas over induction let me know why? Unlike traditional electric, Induction is fast and immediate like gas. What is the negative?

Gas hob, electric ovens. I like dual fuel so that I can always cook, whatever the situation/power cut, and I like the visual control over the heat.
DS cleans it as he enjoys fiddly stuff.

I hate cleaning the gas hob, for that reason alone i would get induction.

Well seeing as most of the reasons they give don't actually apply to induction, apart from use in power cuts, I think they must be getting confused with ceramic hobs, which look like induction, but behave like electric.

Induction. We’ve moved and now have gas and want to replace it. Induction is a doddle to clean, water boils incredibly fast, it’s contrllable like gas once you are used to it.

I do like gas for roasting an aubergine though.

I prefer to cook on gas but if buying a new cooker I'd get electric with a ceramic hob. Because I'm lazy and they are easier to clean
