Roast tomato and garlic pasta.

For each person, bang one bag of cherry tomatoes and about 4 cloves of garlic that have been peeled and squished a bit in a roasting tin with a bit of oil and seasoning in the oven. While they’re roasting strip the leaves off half a basil plant per person and chip with a potato peeler about 1/4 block of veggie Parmesan each. When the tomatoes start to smell good (a lot of liquid will come out, don’t be tempted to pour it away) cook pasta - I like linguine but any would do, about 80g dry weight per person. When the pasta is cooked, drain it, and throw the pasta, basil and cheese into the tray with the garlicky tomatoes, give it a good stir so the cheese melts, the basil wilts, and the pasta is coated with the tomatoey garlicky juice, and serve with black pepper.

On the BBC website there is a recipe for Tom Kerridge Lamb Byriani. Replace the lamb with chickpeas and cauliflower but follow the rest of the recipe (and use veg stock). Marinate the veg the way you would the lamb. It's amazing.

Burnt Aubergine chilli on BBC good food website is fantastic. Also good is, Meera Sodha East and Fresh India as DH got one for Christmas and liked it so much he bought the other. We've cooked so many recipes from we've said we're stopping eating meat!

DHs two biggest food hates:

Beetroot and mushrooms.

I love them both, they are definately up there in my top favourite veg.

if you want a meal in 10 minutes then frozen jacket potato, tinned vegetable chilli and mix in tin of taco beans on the hob. Whilst that's cooking, use the remaining 8 minutes to cut tomato flesh (not seeds or skin), red chilli, large mushy avocado, coriander, lime juice and salt and make the best, freshest guacamole to go with it. serve with soured cream.

I’m not veggie but eat a variety of meals, often meatless. I’m not wild about vegetables, but have a few favourites. Not remotely exciting but some of my favourites are mac & cheese, cauliflower cheese, pasta with tomato and mascarpone sauce, potato, broccoli and cream cheese bake, pasta alfredo to name a few.

This is the best veggie shepherd's pie recipe ever (I use normal potatoes though as not a fan of sweet). My meat eating family love it:

Honey roasted veg, pasta and a little pesto is nice.
A bag of quorn chicken pieces, a bag of spinach, a big dollop of red pesto and a ripped up mozzarella ball in the oven for about 40 minutes is nice- dead easy and looks like you’ve made a big effort.
Flat breads with hummus and whatever you fancy on top.
I like the £1 chef recipes, easy, cheap and healthy.

Pasta with artichoke pesto - just whizz up cooked onions, butter or olive oil, pine nuts and ricotta. Really tasty.

Aloo gobi matar (potato, cauliflower and pea curry in a fresh tomato sauce)

Veg chilli with puy lentils instead of meat, I add lots of other veg like finely chopped sweet potatoes and courgette. Finish with chipotle paste and a few squares of dark chocolate.

Egg stir fried rice with Kimchi and korean chilli bean paste (though I like adding frozen prawns as well)

Roasted miso aubergine (with a marinade with miso, soy, honey, vinegar, garlic) with spring onions and sesame seeds. Or aubergine stuffed with peppers, onions and red pesto with cheese on top.

Quick mixed bean chilli with fried eggs and coriander on top

Baked potatoes stuffed with cheese creme fraiche and spring onion

Tofu stir fry

Spicy noodle soup with pak choy and a boiled egg (really quick as well if you use frozen ramen)

We have cut down the amount of meat we are eating to 4 days a week so I want to make sure the kids especially have yummy, nutritious alternatives.

Nut roast, mashed potatoes, broccoli, peas and vegetarian gravy.
Same with Linda McCartney sausages and fried red onions. Possibly yorkies as well.
