Veggie lasagne - tomato pasaata with aubergine , onions and couchette, white sauce and broccoli and garlic bread side dish.

Veg curry and rice with some naan bread.

Roast a bag of roasting Mediterranean veg

Cook pasta. Make tomato pasta sauce. Add baked beans or any other tinned beans. Combine all and bake, with or without cheese on top Grin

If you want a really tasty and really quick veggie/vegan dinner.

Sauté 1 chopped onion until softened then add 3-4 chopped cloves or garlic (more or less to taste) pour in two cans of ratatouille and warm until simmering. Meanwhile cook the pasta of your choice (I use fresh pasta spirals but you can do whatever you fancy) then drain and stir in and serve. Absolutely delicious and takes 15 minutes start to finish. If you are veggie not vegan you can add some Parmesan. I also serve it with warm bread roles smothered in garlic butter.

My old boss used to make a fabulous potato/onion/cauliflower/broccoli cheese bake. Just all the above layered with cheese sauce and chilli flakes, then topped with grated cheese and grilled til it’s bubbling. Gorgeous!

Also roasted peppers, tomatoes and creamy leeks used as a lasagne filling is bloody lovely.

@frostedviolets I made this (obviously you can omit the mushrooms!) it was very tasty, and even my husband, who normally demands meat of some description enjoyed it as it was!

I enjoy trying new recipes, which may seem a little different to the "norm" though... I suppose it depends on whether you want a generic "easy" meal, or something you've never tried before...

I'm not a huge barbecue sauce fan, which is putting me off trying anything with the "pulled jackfruit" which is available in cans at most supermarkets, such as tacos or something like this recipe... Apparently it's very much like "pulled pork" but I've never tried it, so can't guarantee that it does!

Put everything that isn't the rice cooker in the rice cooker.

"Toast" Grin

We eat a lot of pearl barley risotto, a low GI version of the traditional risotto.

Fry onions and in butter, add pearl barley and stock. Then add your veg of choice - we love butternut squash.

Tart it up by throwing in a glass of white wine, some cream, parmesan... seasoning and herbs. Delicious.

Vegetable Thai curry. The green curry paste from Blue Dragon is very nice

If you're vegetarian and not pescatarian beware this sauce (and most other thai green curry sauces) have fish in.

I made a delicious ramen yesterday-

Veg stock
Miso paste
Ginger and garlic (I used the jar ‘lazy’ stuff)
Shredded carrot
Spring onion
Pak choi
Fine noodles
Beansprouts
Chipped red chilli
I had mushrooms but those can be left out.
Topped with Sriracha sauce

Unbelievably tasty!

There's some lovely recipes here I can't wait to try.

My current favourite is oven-baked halloumi fajitas. Doing them in the oven is so easy it makes a great mid-week tea.

Lasagna - get a bag of frozen Mediterranean veg and roast for 20 mins. While that's cooking, make a tomato sauce with a tin of chopped toms, onions and herbs, and a bechamel. Layer veg,toms, pasta, bechamel x2 and bake for 40 mins.

Bit boring for some maybe, but I love roasted tomato and red onion soup, with toasties or a panini.

Quarter about 10 salad tomatoes, peel and quarter two red onions, peel a couple of garlic cloves and put it all in a roasting tin with olive oil and seasoning. Roast until soft and cooked through. Add it to a saucepan with enough veggie stock to cover and some basil. Cook for a bit longer then blend. Obviously really easy, but it's tasty, and handy to have some frozen too.

Ah, that's great! I know it used to have fish paste and anchovies in, and the ingredients on a jar on Amazon still shows fish paste.

There are definitely different versions of that Blue Dragon paste around. I tried to buy some in B and m the other day and it had fish in it, but the one in Tesco didn’t.

All the food I cook is easy and quick due to working plus having 3 children under 4 including a 4 month old baby and a partner who works 12 hour shifts 8-8. The majority are vegetarian because I don't really like meat and but besides that it's so expensive! I have Coeliac disease so some things such as wraps/pasta/bread is swapped.

Mexican food such as fajitas/enchiladas/tacos are quick and do down well as everyone assembles their own.

Pasta/spaghetti/bake with a variety of sauces. Kids love mixing in mozzarella because it melts to become "stringy" which is apparently fun! It's cheap too.

Omelettes or savoury crepes/pancakes. You can experiment with fillings and sides. Spanish tortilla with the potatoes in are delìcious and a family favourite!

Dp says this is boring but me and the kids love a jacket potato! We also love a saslad with grated carrot, baby but not spicey peppers, cucumber, any leftover roasted vegetables from previous meals and eggs and cheese to make it filling. The 3 and 4 year olds love deciding what to choose, I like them to get involved in shopping and meals.

Curry, rice and naan bread. We don't like a lot of spice. Easy to do Indian and Thai curries from scratch but always have a couple of jars in. Asda do a jarred Dopiaza which is our family's favourite with a Peshwari naan (I haven't found a gluten free naan bread of any brand or flavour I like yet though).

Also I don't know what your schedule is lile but vegetarian curries/lsagnes//ottage pies/lentil bakes etc I like to double and freeze. You never know when you may be stuck somewhere or get home late or the adults in the house don't feel like cooking but there's no money for a takeaway!

@WaterOffADucksCrack when you use the jars what do you add to them? I always find it a bit rubbish when I add veggies to them but we liked them when we used to eat meat.

Quick and easy but oh so tasty, this is one of my favourites :

Tomato and pesto Penne

2 cloves garlic
Olive Oil
Basil Leaves
3 Tomatoes
Pine Nuts
Salt
Fresh penne Pasta
Vegetarian hard cheese

Chop 3 tomatoes
Chop a pack of Basil leaves
Crush 2 cloves of garlic with a good pinch of salt
Mix together in a bowl with Olive oil

Toast a packet of Pine nuts and add to the bowl

Cook the pasta and add to the bowl, add around 3/4s of the packet of hard cheese, grated, mix it all up and serve with garlic bread, delicious

@Treaclepie19 I will often roast sweet potato and butternut squash when I'm going to have the oven on anyway, and either of these is great in a jarred curry sauce. Kids Gav is sweet potato and chickpea, annd they tolerate my throwing in frozen spinach leaf too. DH and I like aubergine (again, I roast so it doesn't take much oil)
