NO mushrooms as DH hates them

Easy vegan chickpea curry. Simple, healthy and delicious. I cooked it a bit longer than it said. If you don’t have maple syrup you could use Golden Syrup

Veggie sausages inside Yorkshire puddings or cooked as a toad in the hole with veggie gravy, mash, peas and carrots. Absolute doddle to do, too.

It's going well so far!

Have had for dinners:

• Chicago town vegan BBQ jackfruit pizza.

Was DELISH.

• Made a vegetable curry with tikka paste, lots of vegetables and lentils with naan and poppadoms
• today had pitta, red pepper houmous, honey roasted vegetables with mozzarella, basil and chilli.

I thought it would be really difficult, especially for DH who is a keen meat eater but so far, it's going really well

@iklboo. Thank you so much for the tip about the Red Dragon pie. I used my home grown leeks, leaves from the home grown purple sprouting and put dairy butter and sweet potato in the mash. DELICIOUS!! and quite high in fibre too. Going to be a family favourite here too (we are omnivores).
