So thanks to the sweltering heat it’s been salad for dinner every night since Saturday.

However, despite having “different” salads - it feels a bit samey and I’m running out of ideas (we’ve had goats cheese salad, Cesar salad and smoked mackerel and salad so far). I always tend to do the same variations on dressings too- so would love some new ideas.

Have been browsing bbc good food but not being inspired so far

I'm an old school American fan.. chopped salad! Chopped: anything! Then add extras to your taste: chilli, parsley, mint, mayonnaise, pepper, vinegar cucumber. In fact any herbs can work.

CaravanHero · 23/07/2019 19:27

I don’t think you’ll solve the ‘samey’ feeling by new variations.

I love a salad but wouldn’t want to eat it several nights on the run...salary bits on the side of something, fine, but not as the main meal.

Leave the salad in the fridge and do something else!

MauisHouseOnMaui · 23/07/2019 19:27

Beef and beetroot - beetroot, balsamic vinegar, radishes, red onion, lettuce, and beef (I use leftover roast beef but in this weather when I haven't done roast I'd cook a steak and slice it).

CaravanHero · 23/07/2019 19:28

salady bits on the side

DoodleCat · 23/07/2019 19:28

Ooh, another thought. If you eat meat then marinade chicken in teriyaki, grill and add. Could have extras such as pineapple grilled.

Malyshek · 23/07/2019 19:29

I don't do recipes for salads - I just toss together stuff I like.

Usually, corn, onion, bellpeper, tomato, tuna (or chicken, or salmon), rice or pasta.

Occasionally I toss in goat cheese and raisins. Or pickled ginger.

For sauces I'm usually lazy and buy it, or else a simple vinaigrette (vinegar, oil and mustard).

Pinkkahori · 23/07/2019 19:29

Mixed leaves, feta, beetroot (vacuum pack, not pickled) and honey glazed walnuts. Delicious.

Zippyx · 23/07/2019 19:29

AIBU to not understand why you need to have salad just because it's hot? Confused

Pasta salad?

Thehop · 23/07/2019 19:30

I make a dressing that’s balsamic vinegar with a splash of Worcestershire sauce in. It’s gorgeous

Sparkletastic · 23/07/2019 19:30

Halloumi watermelon and mint
Salmon Nicoise
Greek Salad
Caprese
Fig, hazelnut and ricotta

ShagMeRiggins · 23/07/2019 19:30

Why does everyone post on AIBU? For everything that has nothing to do with AIBU?

Bloody hell. I need a salad now. Wink

MyKingdomForACaramel · 23/07/2019 19:30

@Pinkkahori that’s almost literally what I had for dinner! It was lovely but am getting bored.

I don't eat rabbit food. Sorry. In fact everywhere I go to eat out, the salad is left wilting. Do people actually like salad?

I like potato salad though.

Just make a sandwich. No one cares, and I agree it is too hot to cook!

Malyshek · 23/07/2019 19:31

Another good option for the protein is either shrimp, or salted duck breast.

MyKingdomForACaramel · 23/07/2019 19:32

@Zippyx good point - mainly can’t be arsed with cooking (my kitchen gets hot), and being so hot I have no appetite for hot food.

Good call sparkle. Caprese is really simple and tastes so lovely.

f83mx · 23/07/2019 19:32

Baked Salmon, roast - baby potatoes, pepper, courgette, tomato then some leaves and feta - feels more
“Mealy” than a salad but light ....

Teddybear45 · 23/07/2019 19:32

Try hummus and olives instead of cheese and pile on the capsicum / onion / herbs.

WisestIsShe · 23/07/2019 19:33

Home made kebab? Naan, salad, chicken with a bit of spice, sour cream and sweet chili sauce. You'll never get another from the take out!

Dotty1970 · 23/07/2019 19:33

Why is salad needed every night just because its hot? Confused when your becoming conscious of being 'samey' etc. You probably need a lasagne or some chips followed by ice cream because it's hot

MauisHouseOnMaui · 23/07/2019 19:33

And you don't have to have salad when it's hot. Tonight I did chicken, ham, and cheese on a plate with some bowls of cucumber, tomatoes, peppers, tortilla chips, corn on the cob, coleslaw, and sauces/dips along with some bread buns all put on the table so everyone could make their own sandwiches and I didn't have to actually cook.

MyKingdomForACaramel · 23/07/2019 19:33

Fog hazelnut and ricotta sounds delicious, as does adding Worcester sauce to a dressing

Pinkkahori · 23/07/2019 19:33

That's a coincidental Kingdom! It's a great combination, isn't it?

Tidypidy · 23/07/2019 19:33

Today we had fruity couscous, leaves, sliced avocado, falafel, beetroot and hummus. Rice salad is lovely too with a Thai dressing- just go careful with the fish sauce.

BlueSkiesLies · 23/07/2019 19:34

Oooh here’s my favourite:

Roasted peppers and red onion
Bag of rocket and watercress or the beetroot baby leaf and herb salad mid
Chickpeas
Watermelon
Halloumi
A really lemony dressing
