So thanks to the sweltering heat it’s been salad for dinner every night since Saturday.

However, despite having “different” salads - it feels a bit samey and I’m running out of ideas (we’ve had goats cheese salad, Cesar salad and smoked mackerel and salad so far). I always tend to do the same variations on dressings too- so would love some new ideas.

Have been browsing bbc good food but not being inspired so far

I made a fridge full of salady bits this morning when it wasn't too hot so I just have to pull the dishes out of the fridge for the next couple of night and the 5 of us help ourselves:

Pesto pasta salad with some feta olives and sliced almonds
Blanched broccoli with walnuts, feta and balsamic
Cous cous salad with curry powder, peppers, peas and sultanas with some peanuts
Roasted sliced sweet potatoes with cumin
Sweetcorn bake (new recipe which is like a giant sweetcorn fritter which everyone loved)
Watermelon, feta and rocket

I made enough for a few days and I'll have naice bread and butter for on the side. It helps that I am trying to use up the pantry stuff before pay day and I meant to make a spanikopita but never got round to it and had loads of feta in the fridge which guarantees my kids will eat a dish

@TheHallouminati what on earth!! I mean I love snickers, I like apples, I’m not 100% sure what vanilla whip is- but I’m almost sure that the three should never meet.

I do a tabbouleh style couscous salad, so cooked couscous mixed with olive oil, lemon juice, finely chopped cucumber, tomato and spring onion and loads of chopped fresh parsley and mint and salt and pepper. If you have some left over it’s even better the next day.

NIcoise, so tuna, anchovies, hard boiled egg and olives on lettuce and tomato. Think some have cooled baby new potatoes in.

Cold pasta, mayo, spinach, cucumber, tomato, radish, onion and cheese.
Beansprout salad!
Cold savoury rice?
Summer soup (eaten cold) you can literally use all the ingredients for a salad along with potato to thicken. You have to cook it all but then let it cool, refridgerate and when ready to eat, serve!
Chilled couscous salad.

all of those, and also grated carrots make a nice salad with a vinegary vinaigrette and parsley. Chopped onions and thin slices of cabbage go well in salads too.

Last night we had peach, mozzarella and Parma ham salad with toasted pine nuts and balsamic dressing. Very tasty and quick to make. No chopping, just use bagged leaves and tear the mozzarella and Parma ham.

Tonight we had:
Potato salad- only a tiny bit mayo then vinaigrette so not super heavy
Quinoa with tomato/cucumber/peppers/red onion and loads of herbs
Carrot hummus
Chilli halloumi

Was so good.

Avocado sliced, interleaved with large vine tomatoes and buffalo mozzarella. Garnish with basil and balsamic vinegar.

Chicken noodle salad - grilled chicken, rice noodles, peppers, sweet corn, grated carrot, grated cucumber, fresh coriander, sweet chilli sauce, lime juice, soy sauce.

Mange tout
Hummus

Then normally with:

Grated cheddar
Roasted sweet potato with cayenne
Roasted Chickpea in curry powder
Roasted pepper and garlic

We had a Caesar salad tonight,a whole spatchcock chicken and rashers of streaky crispy bacon(both served hot)on top of large plates of salad with croutons and caesar dressing,it's becoming one of our favourite dinners.

A Ploughmans always goes down really well with our DC as well,a good chunk of strong cheese,some fresh salad,some apple,a crunchy baguette and some good pickle,my DH and our 5DC tend to have pork pie and roasted ham on they're ploughmans as well.

Greek meals are another favourite in our house as well,we'll have a greek salad(with lots of feta)served onlong side toasted pittas,hummus and some chicken(kebabs) and roasted peppers and onions.

Were trying to make tasty,quick and lighter meals at the moment because our house is hot enough without the fan oven being on for ages.

I'm eating a Nigella one at the moment.

Marinade a crumbled log of goat's cheese in the zest and juice of a lemon, some olive oil and dried mint. Stir in a pack of cooked puy lentils and a jar of roasted red peppers. Top with chopped mint.

It is absolutely freakin delicious Grin

Raw salmon,cold sushi rice, avocado, spring onions, edameme beans, sushi rice stressing and soy.
Or tabbouleh with any marinated meat or fish.
I also like a traditional Caesar with chicken and chopped anchovies chucked in.
If you still want something cold, toasted flatbreads with tzatziki and taramasalata with a simple side salad and a selection of deli meats and olives always goes down well in this household.

Spinach, red onion, tomato, cucumber, yellow or orange pepper, coriander, feta cheese all mixed together in a bowl - (or fried halloumi) cooked Unpickled beetroot, medium boiled egg and whatever meat I fancy Smile

We had mergers sausage, hm tzaziki, pickled red onion, hummus and then a herb salad (rocket, coriander and parsley) with some finely chopped pepper and tomato. Bit ofnpitta for those who needed some carbs

Haha i am rubbish compared to these suggestions! Mixed beans from a tin, toast, cucumber, humours, oil and vinegar. Takes 3 mins to make. Yum.

Grilled halloumi, or Marinaded chicken usually Chinese style or teriyaki, tikka, or Cajun style all served with Apple and beetroot chopped up into the mixed leaves, cucumber, sweetcorn and peppers then a dollop of tzatziki a toasted pitta on the side. Xx

Greek salad for me. Lots of tomatoes, peeled cucumber, spring onion and red onion, feta cheese, green olives, with olive oil and oregano. With a side of tiger bread and hummus. Greek salad is life

Shit loads of fresh herbs.
Some torn up buffalo mozzarella and fresh basil

I make a dressing from sesame oil, soy sauce, smoked paprika and agave nectar (or you could use honey?)

I also use it as a marinade to soak sliced tofu which I then griddle fry and have on top of lettuce, cucumber, radish, white or purple cabbage, spring onions and peppers. Sometimes add walnuts!
