Tell me about your salad

So thanks to the sweltering heat it’s been salad for dinner every night since Saturday.

However, despite having “different” salads - it feels a bit samey and I’m running out of ideas (we’ve had goats cheese salad, Cesar salad and smoked mackerel and salad so far). I always tend to do the same variations on dressings too- so would love some new ideas.

Have been browsing bbc good food but not being inspired so far

We had burgers, tonight but they got made in a big, heavy frying pan. Still got far too hot but didn't malevolently overheat the house for the next 3 hours like the grill or oven would.

Haven’t read the thread but rocket, beetroot, not picked, datterini tomatoes, spring onions, crumbled goats cheese and pine nuts. Served with either grilled duck breast or steak. Yum.

2 salsa style salad
3 egg or tuna mayo with crudités
4 chopped salad with extra vegetables
5 mayo based chopped salad
6 potato salad with side salad
7 rice salad with vinaigrette
8 pasta salad
9 cottage cheese with salad and chopped apricots and pomegranate seeds
10 Chinese leaf salad with bean sprouts peppers baby corn etc
11 chunky salad with olives and pickles plus beetroot
12 couscous salad
13 wilted spinach, goats cheese, cherry tomatoes and other salad of your choice
14 mixed bean salad with light citrus dressing

I have a salad every day - either for lunch or as a side in evening

We have a large bowl of chopped salads most days in the summer, green leaves, peppers, red onion, carrot, apple, sweetcorn, tomato, cucumber, radish, etc with an Italian dressing. Served with burgers (Beef, pork, chicken or turkey) in buns or chicken kebabs in pita bread, roasted chicken, salmon, all done on bbq or just cold meats /boiled eggs /cheese and coleslaw.

I don't think you can beat a really good coleslaw, I add radish and coriander and sometimes chopped peanuts and chilli.

Iceberg lettuce. Sliced ham. Boiled egg. Purple onion. Shredded cheese. Black olive. Green olive. Sometimes I throw macaroni on top. French dressing.

@merlotqueen - I love home made coleslaw too. I add julienned strips of raw celeriac to mine, and sometimes strips of raw beetroot too - it does turn the mayo pink, but tastes great. If I have some in the fridge, I add low fat sour cream or creme fraiche to the mayo, to lighten it. And I use red cabbage instead of white - I don't know if it tastes any different, but I like it better.

Stilton and pear salad is my go to. Especially if I can be bothered to griddle some chicken and the pears.

I bought a lovely raspberry & balsamic dressing in Cornwall that also adds to any salad.

Does it really matter, @KarmaStar? I don't think anyone else has objected, and I don't think it is necessary. If you think the thread is in the wrong place, hide it and move on.

I love this thread, and now have three lists/sub categories of salad ideas on my phone. I love lists almost as much as I love salad Grin

This can be served hot or cold, it came from the Good Food mag years ago.

Roast some new potatoes/chopped potatoes.
When nearly ready add some salmon fillets, cherry tomatoes and asparagus (I also like sugar snap peas, sprouting broccoli etc) for about 20 mins (or however you like your salmon cooked).
Drizzle with balsamic vinegar and decorate with basil leaves.

Also like rice salad which is like a cold jambalaya, basically cooked rice with a dressing containing Cajun seasoning, add chorizo, chopped peppers and kidney beans.

My dd loves bulger wheat and its so easy, so tonight it's that and whatever else I can find. No watermelon or figs but thinking of charing some peaches and throwing those on with parma ham.

I start with the dressing first - this can be added to rice, cous cous, pasta or normal salad, and it makes everything so yum. I make in a batch and keep in a jar in the fridge. Mug of extra virgin olive oil, third of a mug of red wine vinegar, a clove of garlic, salt and pepper, and then fresh herbs, a decent handful each of basil and parsley, stalks and all and then blend. Utterly yummy. Had it in cous cous with olives, red onion (soaked first in water so not too sharp) and tomatoes with salmon, also had it with pasta along with chopped tomatoes, parma ham, mozzarella and olives - delicious. Stick it in any grain with chopped whatever you have and some protein and boom, you’re done.

I found a 'Cosberg' lettuce in Lidl the other week and chopped that then mixed it with some rocket - was lovely. Although someone once told me "if you knew what they did to iceberg lettuces to make them iceberg you would never eat them again" i do wonder about the Cosberg which is obviously a Cos lettuce subjected to the same treatment!! I presume she meant they use a lot of pesticides and chemicals on the lettuces as they grow?

But yes salad with a cosberg lettuce, radishes, peppers, tomatoes, served with new potatoes and protein of choice - yummy.
