Just out of interest, as I’ve really been enjoying the fridge contents threads! Also, I’m in a bit of a recipe rut, so could use some inspiration.

We are a family of four, (2 adults and 2 dcs). I eat mainly veggie, but, since my family can’t seem to agree on veggie meals that we all like, I now just cook meat for the rest of the family and adapt it, so it’s suitable for me too.

Our favourites are:

  • roast dinner
  • choose-your-own-toppings pizza
  • pasta and veggie tomato sauce
  • sausage mash & gravy
  • Buddha bowl / salad type things with everyone’s favourite things

One pot garlic parsley Parmesan pasta (we add peas)
Quorn enchiladas
Quorn sausage and apple casserole
Minestrone soup
Brussel sprout, goats cheese and pomegranate salad
Dd and I are both veggi she is 11 I'm very lucky she'll give anything a go (accept avocado)

A PP suggested links might be a good idea, so here are the two of mine that aren’t Roast dinner etc.

www.asdagoodliving.co.uk/food/recipes/crab-chilli-linguine This is the go-to for crab and chilli linguine although I’ve tweaked it over time and rarely use actual recipes anymore. I prefer to use lime juice than lemon and sometimes add a few sundried tomatoes or halved baby plum tomatoes.

The Chicken, Garlic & Lemon casserole I use chicken thighs and don’t bother chopping them up. I omit carrots as imo it tastes much better without them in it even though I love carrots. We usually have crispy roasted baby potatoes and steamed, buttered broccoli with it.

Roast chicken with vindaloo sauce, Indian style veg side dishes

Sous vide belly pork, barbecued or grilled, served in lettuce wraps with kimchee and bean sprouts

Middle Eastern style barbecued lamb with various Middle Eastern salad dishes

Sashimi bowl with salmon, salmon roe, seaweed and avocado salad

Chilli made with oxtail or beef cheek, quite a meaty sauce, very spicy indeed, served with cheese and sour cream.

One of ours is lemon and tarragon chicken (thighs) I cook it in the oven with some crushed garlic and a drizzel of olive oil. Baby new potatoes and greens. I got the recipe from BBC good food

Pasta with chicken in a tomato & chunky veg sauce. Loads of Parmesan on top

Salmon (plain for dc, sweet chilli for me and dh) tender broccoli, peas, sweet potato mash

Sausages, cauliflower cheese, broccoli, peas

Fajitas

Chilli & rice with cheese and sour cream on top ( not mince I’m the chilli, we use diced beef and slow cook for ages)

DS1’s go-to meal if he’s cooking for himself is oyakodon. He seriously makes it all the time (it is easy).

We have more than 5 in standard rotation,:
Spicy chicken wrap with salad
BBQ slow cooked pork in ciabatta with salad
Omelette stuffed with cheese, onion, potato, tomatoes, grated courgette, bacon
Veggie burger or sausages with salad
Mince beef & tomatoes with rice
Houmous & pitta with ham, tomatoes, olives, warm falafel and other tapas bits
Pizza loaded with extra veg and meat
Savoury thick pancake: ham or bacon, mushrooms, onion, cheese, veg

Occasional dishes:
Lasagne with garlic bread and salad
Steak with saute potatoes and steamed veg
Beef burger with salad
Slow cooked lamb with roast vegetables
Pasta or tortelloni with chicken, veg and sauce (creamy / pesto / tomato)

Oh, also curries or stir fries every week or two. Cashew nuts and chopped chillies cooked in a separate pan so they're crunchy (and so the baby doesn't get loads of chillies).

Fish fingers ( Although I don't like these!)

Baked beans on toast (again I'm not a super fan..)

I’ve never made meatloaf, but it’s cropped up a lot on here. Will have a look for recipes.
