If you could only ever have one which would it be? I’m going for baby carrots. Disclaimer I’m not vegan or vegetarian, I just love veg

The veg i eat the most is def onions , stews curries chilli Spag bol , pies etc all have onions in,
But as a stand alone veg , broccoli closely followed by carrots ( I had both for my tea tonight _

Things to do with cabbage

  1. a lovely accompaniment to any dish involving gravy
  2. Risotto with bacon
  3. Bubble n squeak
  4. Colcanon (is that just Irish b&s?)
  5. Frittata
  6. Coleslaw
  7. Stir fry
  8. Soup
  9. Pickled
10. Welcome relief from mastitis I’m sure there are many more, but I think it’s time we crowned the cabbage King!

Tomatoes. In all forms but fresh sliced olive oil and salt best.
Brocolli a close second. Cooked just right with butter. Overcooked? Hate it.
Artichokes close third.

One quick way I do leeks is slice them into rings and pile into a pyrex jug, add a good knob of butter and a splash of water. Microwave for a minute then stir and microwave again, they might need a minute or less depending on quantity. Quick buttered leeks.

Oh yes ! but not truly, really , eh I remember it’s to do with the seed situation isn’t it ? Or something similar. Remember once looking it all up and discovering something else (now forgotten) about not nuts I think.

Sweet potato. Oh my God. It is the veg to end all veg. I love it so much.

Parsnips: roasted or in a lovely creamy soup

Sweet potato: anytime, any day, any place

Red onion: eaten thinly sliced in a sandwich or warm cheese roll, or caramelised in houmous etc

Beetroot: baked in their skins, then declothed and put into a nice dressing whilst still warm. Or served with a fresh goats cheese. Also great as a drink either alone or with a bit of apple juice and a little ginger

Courgettes: cut chunky and sautéed in rapeseed/canola or olive oil with ground cumin or a pinch of smoked paprika and tossed into roasted sweet peppers

I could go on - I'm trying to eat more veg less meat...

Oh yes:mushrooms (not the white ones) gently sautéed in olive oil with a little garlic, salt and balsamic vinegar and served on a thick slice of buttered sourdough toast

Best spice (so far) cinnamon. It goes on my breakfast porridge, in baked rice pudding (plus nutmeg), in my daily hot cocoa (inc nutmeg). I make tea with it when I'm unwell... I'm stocked up as it keeps disappearing from my local shops.

I love cabbage (surprising as in my childhood I got such a soggy mess of it on my plate). Served lightly cooked with a little unsalted butter, salt and pepper and - May I say - a tiny bit of ground cinnamon! 😁

Aubergines are technically a fruit too....
Depends on the season for me - we had purple sprouting broccoli fresh from the garden yesterday and it was utterly delicious. Lightly steamed and then sautéed quickly in olive oil with garlic and chorizo chunks.
Next month it will be asparagus, in June it will be broad beans, and in July we will have tomatoes and courgettes. (Also technically fruit.)
DH is an ace gardener.
