If you could only ever have one which would it be? I’m going for baby carrots. Disclaimer I’m not vegan or vegetarian, I just love veg

I know many of you think celery is the vegetable of the devil but it is my absolute favourite!

I really like sweet corn but I can’t help wondering what good it’s doing us when it can go through our entire GI tract and immerse looking the same as when it went in 🤔

I agree with cabbage because I'm not classing any tubers as veg.

Why would you need cabbage for breakfast? Have tomatoes... a fruit 😂

As a diabetic, potato is a carb, not a veg (that's my excuse so I don't have to choose between potatoes and my one true love...)

Sautéed with butter and black pepper.

I also put spinach in a lot of food because it's an easy and tasteless source of goodness - I buy chopped frozen spinach and toss handfuls in everything. 2yo's macaroni cheese, done. So I probably eat more spinach, but I don't enjoy it.

Cauliflower for me! You can literally do anything with it! Rice, steaks, caulk cheese, boiled cauli, pizza base, wraps....

I'm amazed at the popularity of cabbage on this thread. I rarely buy it, but it's now on my shopping list. Do you just steam it?

I'm between broccoli and cauliflower. I could seriously live on them both and not sure I can choose between them. They are probably in my top 5 favourite foods, which shouldn't unbearably virtuous but I seriously love them and usually smother them in cheese

I LOVE peas!

And cauliflower. And cabbage. And aubergines. And celery. And potatoes. And avocados (yeah yeah I know it's a fruit). And broccoli. And all legumes. And asparagus. And Jerusalem fartichoke. And peppers. And courgettes. And sweet potatoes. And spring onions.

I think it’s acceptable to include sprouts (the bonsai cabbage), spring greens, red cabbage, white cabbage, savoy and pointed

Asparagus gets my vote, because you can eat it hot or cold, as a side dish or on its own, for instance with mayonnaise or vinaigrette.

Does anyone still salt aubergine? I thought that had gone out years ago.
