To ask for sandwich fillings that go with avocado?

I have recently discovered that I like avocado Blush I know... proper millenial here!

Anyway. I'm a bit unsure what to have with it. I fancy having it in sandwiches or a salad for a packed lunch, so please hit me up with ideas for what (vegetarian, so no meat or fish) fillings go with it, or other delicious ideas for what to use it for!

If you're putting it in a sandwich and waiting till lunchtime to eat it at work, you must put it in the fridge. Even then it will probably go a bit black.

Banana and avo is good-weird mashed together, but not if you are making in advance as the ‘nana will discolour.

Mashing lemon juice in with the avo, or dipping your slices/chunks in it, slows the discoloration.

I like to eat avocado sliced (or mashed with a fork) on toasted brown bread with a bit of salt and freshly ground pepper.

Don't just go for sandwiches. I've had some amazing vegan cakes featuring avocado - they add creaminess. (No, I haven't got a recipe to hand.)

@Franheaton thats why you're supposed to dash a bit of lemon juice on it. Stops it oxidising. Works for apple slices too.

egg, over easy , with bacon and hollandaise sauce on an english muffin. We call it a California Benedict here. It's delicious! Grin

Just mashed on toast, or my favourite sandwich is very simple - just add tomato with a little vinegar or vinaigrette.

I love avocado! My staple lunch is goat cheese, avocado and beets on a flatbread with a bit of balsamic dressing on top.

Also Buddha bowls are super yummy too. I love couscous, goats cheese, avocado, sprouts, beets, shredded carrot and broccoli with a peanut lime dressing. 🤤

Lots of people have. They are no longer classed as vegan, many of the higher star restaurants have stopped serving them. It take a whole bath of water for each avacado, never mind the Mexican cartel estimated 130million profit from the sale of Avocado.

Just had one as a side with my dinner: thinly sliced and loads of lime juice salt and pepper.
Mine come from Queensland so the Mexican cartels would struggle to get their cut.

My other favourite is guacamole, a mashed clove of garlic per avo, extra virgin olive oil, salt and pepper, jalapeños, and as much coriander as you can handle. Shovel it in with corn chips.

Btw, the no longer considered as vegan is a bit edge case: it depends on the source.
If they use natural pollination then there is no issue.

However if you have an issue with migratory beekeeping and you don't know where your food is sourced from, you also need to give up almonds, apples, plums, cherries, alfalfa, blueberries, watermelon, cantaloupe, cucumbers, pumpkin, lettuces, squash and tangerines.
