To ask for sandwich fillings that go with avocado?

I have recently discovered that I like avocado I know... proper millenial here!

Anyway. I'm a bit unsure what to have with it. I fancy having it in sandwiches or a salad for a packed lunch, so please hit me up with ideas for what (vegetarian, so no meat or fish) fillings go with it, or other delicious ideas for what to use it for!

Has feta been done yet? Tried to RTFT but am now bacon-blind.

Mozzarella, sliced tomatoes and basil leaves.

Grapefruit

A vinegarette of Dijon mustard and raspberry vinegar

Or my favourite, simply Worcestershire sauce. I fill the pit with it and let it ooze through as I cut into it with my spoon.

Roasted veg or sundried tomatoes with a deep of balsamic vinegar.

Very happy with just a drizzle of lemon juice and a sprinkle of black pepper BUT will certainly be trying some of the mouthwatering suggestions!

Smoked tofu cut into slices then fried/grilled. With chilli sauce

Wholemeal toast and avocado, with crumbled feta cheese on top.

I love it in a wrap with hummus and beetroot. Maybe some rocket or spinach leaves for too

I'm so glad people have stopped suggesting meat As an avocado in sandwiches fan and not a vegetarian, it has actually surprised me that bacon is so popular! I really like it with hummous and beetroot or egg mayonnaise.

But I did contribute information on avocado to the thread.

Avocado the equivalent of blood diamonds these days. I have never had one so no advice of how to enjoy them.

As long as you all enjoy them though, let us hope some poor fucker didn t get kidnapped or hurt this time for the pleasure of Avocado.

I like it mashed, with lots of lemon juice and some salt and pepper between two slices of toasted bread with butter. Also with cheese or sliced, boiled egg.

Basically anything salty or spicy

Pomegrate, spinach, red onion, cherry tomatoes bit of feta or fried salty crisp halloumi & avocado = super salad

Well you might think it's information, but the rest of us are reading it thinking you maybe need to do your homework and understand the criticality of avocado production to the economies which produce and export it.

I also like marmite on toast, then spinach and a poached egg on top.

But back to the avocado - is there some sort of vegetarian bacon substitute, because bacon and avocado is fab.
