Jacket potato with chilli or beans and cheese
Homemade vege pizza with sweet potato wedges

Sometimes we just eat this with rice, and then occasionally we do the works so salsa, guac, sour cream, cheese, salad etc. The chilli on it's own though is actually vegan and totally delicious.

I always add a couple of red peppers and then do either egg and potato or chickpea and sweet potato, or tinned green lentils and roasted squash and make flatbreads for dipping.

And one of my favourite ever meals is roasted sweet potato wedges, roast veg (courgette, mushrooms, tomatoes, aubergine) and halloumi, stuffed into wraps with lots of salad and plenty of houmous.

I do think that vegetarian meat alternatives have a place, but there is a lot of really delicious veggie food that doesn't require any.

I haven't read all the posts, so this may have been said, but have a look on oh she glows or deliciously Ella for recipes. They are normally all vegetable.

We are a vegetarian/vegan household and probably have meat substitutes once a week. Some of our favourite recipes are bean chilli, butternut squash and chickpea curry and pesto pasta.

Homemade salads such as coleslaw, waldorf and Russian. Substitute yoghurt for the mayo to make healthier.
Have salads with fruit and cheese. Cheddar and apple, Stilton and pear, halloumi and fig, water melon and feta, brie and grape. I love jacket potato with cheddar, pineapple and home made coleslaw.

Tacos, asda do a great kit. Ok so you may have to use some soya mince but the flavour sachet that comes in the pack tastes amazing!!!! Plus i pad out with onions veg & salad!
Pasta bake or pasta salad. Add alt protein source.
Pizza on normal base, pitta, ciabatta, or even a tortilla wrap! Pick & mix toppings!
One pot dishes soups, curry, stew, one pot quinoa. These can all be as light or as hearty as you fancy. I have a gazillion variations of these!!
xyz on toast beans on, mushrooms on, scrambled tofu on... all need a good helping of marmite Wink
smoothies for brekky / snacks!
fruit salad as above
pancakes savoury or sweet!
polenta i love this stuff it is so underused & under rated in england.
I have done this without looking at other peoples answers to see what i came up with off top of my head!
One last note: peas of any kind are great source of vits & protein & easy to incorporate into any type of cuisine whether they be garden, marrowfat, mushy or mangetout. Viva la pea Smile!

Mmmm just reading everyone elses ideas now!!
I lived off barley risotto when i was on a tenner a week food budget (only within last 3 yrs or so). So tasty, nutritious & filling!!
It included cheapy tom passata & tom puree, value chopped frozen veg, stock, lots of herbs & upto a tin of coconut milk. Bloody gorgeous.
Love international cuisine too, often great for veggies.
