I accidentally bought the most ridiculous amount of beef for our roast on Sunday (well, technically, I selected a small joint, but what turned up was a £36 whopper in my Tesco delivery and I didn’t think to check the receipt 🫣). So we’ve had two days of beef roast so far and tonight it’s going into beef panang curry with noodles and some spring rolls. I’m hoping after 3 days of all beef, all the time, that we’ve nearly conquered it. 😬

A summery bowl of chickpeas or lentils with cucumber, tomato, sweetheart cabbage and/or spinach, beetroot, boiled eggs, halloumi and a bit of hummus and a dressing of oil, balsamic vinegar and lemon juice. Nice and easy weekday staple.
