A very loose and easy recipe for those that prefer a savoury breakfast. Hear me out.

Apologies I’m not reinventing the wheel but… it’s basically a savoury flapjack. I crave savoury in the morning.

I eat breakfast (brunch) around 10ish. I work rurally and outside all day. Very active.

These flappy jack things are easy to make and just need mixing then cooking in the oven or air fryer, storing in Tupperware.

Loose quantities below, anything works really.

bunch spring onions or red/white onion, chopped finely
handful of any flour
handful of porridge oats
one egg
greek yogurt - a few dollops
nuts/seeds mix (from Aldi or Tesco)
and/or chopped cashews - a toddler sized handful perhaps
lots of grated cheddar (or any cheese!)
Tub of cottage cheese (drain the bastard if it’s low fat) or crumbled block of smoky tofu
peanut butter- globs of. (Warm first if too sticky)

oh..salt pepper, paprika, some chilli flakes too.

Prob not low fat or whatever, but my 55yr old body feels sustained during the day eating 3 of these bad boys. I snack on them as and when.

Photos to follow, if anyone wants to try, you are aiming for a claggy mix, not a batter mix.

Try this

toast one side of bread

other side of the bread spread with peanut butter, then top with grated strong cheddar, put that under the grill so the cheese melts

Then at the last minute put either just chilli flakes over the melted cheese so they melt in, or top with sweet chilli sauce

Report back on your findings.

These ideas sound fabulous.

These made a big difference to my savoury bakes, no need to grease, store and travel easily, just peel off and throw in dishwasher. Depending how stiff your mixture is you can get away with standing them on a baking tray instead of in a muffin tin. And @stapletonsguitar my hangover cure (many years ago) was 2 slices of toast, spread thickly with peanut butter and topped with slices of vintage mature cheddar cheese. Stuck to the roof of your mouth, but my god, it worked. And, honestly, beyond tasty! Promise!

Just bigging up my breakfast this morning, porridge, roasted butternut squash (in herbs), tuna and homemade butterbean 'hummus'.

@likelysuspect you’re just showing off now ☺️ sounds delicious. I need a portable breakfast on work days and would be tempted to add a beaten egg to your breakfast and then cook in patties as before

One thing i used to use growing up in France was called 'cake aux olives' - it's quite thick bread-y type loaf with ham and green olives within it and is SO good. Wish it was a thing here.

Also really like vegetable cake though rarely organised enough to make

I know! My “recipe” (not that it is one lol) came from an online savoury flapjack more prescriptive recipe, weights needed to be measured etc. I cba with all that faff so just used the general idea. So easy! No rules (the only rule is no feckin banana).

I’m going to incorporate some of @likelysuspect maverick porridge flavours in my next batch

You could try to replicate perhaps - I have in the past bought these sort of one loaf packets from Tesco/Asda and then added other stuff (roasted onions, paprika, chilli flakes, grated cheese, sliced olives etc) Lovely for a weekend breakfast.

At least then you don’t have a big packet of bread flour and packet of yeast sat in the cupboard…
