A very loose and easy recipe for those that prefer a savoury breakfast. Hear me out.

Apologies I’m not reinventing the wheel but… it’s basically a savoury flapjack. I crave savoury in the morning.

I eat breakfast (brunch) around 10ish. I work rurally and outside all day. Very active.

These flappy jack things are easy to make and just need mixing then cooking in the oven or air fryer, storing in Tupperware.

Loose quantities below, anything works really.

bunch spring onions or red/white onion, chopped finely
handful of any flour
handful of porridge oats
one egg
greek yogurt - a few dollops
nuts/seeds mix (from Aldi or Tesco)
and/or chopped cashews - a toddler sized handful perhaps
lots of grated cheddar (or any cheese!)
Tub of cottage cheese (drain the bastard if it’s low fat) or crumbled block of smoky tofu
peanut butter- globs of. (Warm first if too sticky)

oh..salt pepper, paprika, some chilli flakes too.

Prob not low fat or whatever, but my 55yr old body feels sustained during the day eating 3 of these bad boys. I snack on them as and when.

Photos to follow, if anyone wants to try, you are aiming for a claggy mix, not a batter mix.

Ooh forgot about my little egg muffins that Ive just remembered are in the fridge. Ive got one out now.

I make up a batch of 6 or 7 or whatever

Eggs, cottage cheese, cheddar cheese, then a dollop of whatever veg you want in them, so this weeks are peas, sweetcorn, onion and mixed up with green pesto. I find 4 eggs makes 7 little muffins, give or take

Last weeks were green and red peppers with onion

Nice with tuna in as well

Ohh thank you, this sounds amazing! I'm going to try a plant-based version with tofu, and swap the cheese for nutritional yeast and the egg for a flax egg.

I make a bread with wholemeal flour and lots of seeds. It performs the same function.

@Hummingburp i often use (smoked) tofu, crumbled, instead of the cottage cheese. I have added the nutritional yeast flakes too but think we’ve run out….

Going to try your version too with flax egg because DD is vegan. Never heard of a flax egg!! Thank you!!

In the opposite vein, ham or chopped bacon/chicken could be added but I’m 99% veggie so don’t add them.

I ate 3 of my wee parcels today plus an Aldi layered yoghurt and they saw me last the day. As I said, I’m not calorie counting but they are high protein (and very tasty!) so keep me full and I do a physical outdoors job.

Not me, I’m more of a burper (sorry you did ask) but then again there aren’t many oats in these babies.

There's a French savoury cake that is also fantastic, you can put cheese, ham, olives etc in it. I think it's usually served in slices with an aperitif at fancy get togethers, but I used to make it for breakfast or in packed lunches. Haven't done it for years, but this has just reminded me! Thank you, OP, I will also be having a go at yours.

We’ve run out of marmite too!! I usually soften the marmite with the peanut butter in the microwave for 30secs or so so they mix in better 👍🏼

Fritatta or tortillas or whatever you want to call a lovely omelette sliced up for your lunchbox is great, but "messy eggs" (eggs scrambled with cheese, chopped roasted peppers, shallots and chilli flakes) is my favourite hot breakfast.

When the DC come home from uni they always ask for messy eggs for breakfast on the first morning. They have it with toast, I have it with a large sliced tomato.

I suppose my flapjack things are a bit like a quiche but no need for pastry (god I love pastry) and aren’t as eggy

Messy eggs! Stealing this! My omelettes always turn out a mess because I put too many fillings in them. I shall now be calling them Messy Eggs because it it intentional :)

The important difference is to lower the heat a bit while you cook them. They work better than way.

DD doesn't like the texture of omelettes, she loves scrambled eggs. But she wanted all the filling from omelettes, which is how messy eggs was born.

The contents vary but some sort of cheese is a must.

if you wanted something slightly different sometimes you could make egg muffins with ham/sping onions/whatever you wanted to chuck in.

just use a muffin tray and make the egg mixture add whatever bits & shove in the oven for about 15mins.

was a slimming world recipe but can be high protein.

i have heard of savory porridge before & adding salt not sugar but it doesn’t appeal to me so much

Oh crikey, I didn’t know about savoury porridge! Makes sense though. Everything breakfast wise is geared towards sweet as opposed to savoury (I don’t want toast, I’m fed up of avocados, I don’t want eggs)

Thanks @Sensiblesal i have made savoury muffins in the past but I’m lazy and just dolloping plops onto the baking tray instead I’ve found is easier. Same sort of thing though!

I quite like making a fritatta - salmon, cooked or smoked, spinach, tenderstem broccoli, pesto, lemon zest and 5 eggs in a lined cake tin. Cook for 30 minutes at 180 and then have slices for breakfast/brunch or lunch.
