Aargh!

I was intending to eat better this year, and bought the stuff to do so, but I'm struggling to actually bother.

Dinner is usually fine, but I'm struggling with breakfast and lunch.

I'm not on a diet or anything; I would just like to eat more variety as I seem to always end up having bread lately, and it gets boring. Plus I'm constantly feeling bloated and lethargic.

It's homemade sourdough, so it could be worse, but I'm also shattered all the time, and had hoped that eating more variety would help with any physical symptoms.

I thought writing it all down here might encourage me to make more effort.

If anyone else wants to join me, that would be great 😊

I didn't start well this morning, hence this thread:

So far all I've had today is a cup of tea with oat milk and 1 thin slice of sourdough bread with butter and peanut butter

I use oat milk and it seems to last ages. Do you mean once opened or unopened?

Once opened and in the fridge. UHT lasts us several weeks+ without going off. The oat milk only seems to last 5 days and 1litre is too much to use in that time.

Today has been up and down.

Crumpet with butter for breakfast

2 x Homemade banana egg and oatbran pancakes for lunch with 2 tbsp coconut Greek yogurt (yay me!!)

Dinner: fried Gnocchi with veg and beef burnt ends, etc... same as yesterday.

3 teas with oat milk

I think you can get smaller packs. I think Alpro or maybe Oatly do a smaller (non UHT) pack.

Sorry very long link! It's 500ml Oatly packs on Amazon.

You can also get individual portions in a little pyramid pack, maybe 25ml or enough to whiten a cup of tea or coffee.

B: 2 x banana, egg and oatbran pancakes
L: 1 crumpet with mature cheddar and butter
D: cheese pierogi with pickled cabbage, onions and peppers.

Snack: 2 chocolate biscuits and a handful of cheeselets.

3 teas.

Breakfast: protein porridge (oats, plant protein, almond milk, cacao powder, ground almonds); oat latte

Afternoon drink: 1 beer (330ml)

Late lunch/ early dinner: a protein bowl from a salad bar (double chicken, sweet potato; quinoa, cabbage, salad dressing); apple.

Today- porridge, raisins.
Lunch- hummus soup, wholemeal bread.
Dinner- baked potato, tuna, peppers, celery, carrot, mayo.

I've got a stone and a half to lose for a wedding so today is the first day. Onwards and upwards and all that.

Busy few days. Used up leftovers, so banana pancakes for breakfast yesterday and today. Lunch was crackers and cheese with onion and rocket and some ham.
Dinner yesterday was the last of the pierogi with pickled cabbage.

Tonight's dinner is homemade leek and potato soup, which I'm looking forward to.

Breakfast today was porridge, cherries from the freezer, honey
Lunch- vegetable and oat soup (a lot nicer than it sounds) wholemeal bread, an apple
Dinner - baked potato and pinto beans with celery, carrot, cherry tomatoes, mustard and mayo. Orange jelly.

Back after a break, lol. Had poorly pets!

Breakfast today was some grapes, a slice of leerdammer and 3 small slices of a German smoked/cured ham called Lachs Schinken.

Snack was 4 mini Ferrero Giotto hazelnut balls

Lunch was a cheese, spring onion and rocket toastie made using 2 thin sl. sourdough bread and a mix of mature cheddar and red Leicester. With ketchup on the side to cut through the richness of the cheese.

On my 3rd cup of tea with oat milk.

Dinner tonight is potato and spinach curry.

Mid morning - cappuccino
lunch - porridge with mixed seeds, dried fruit, blueberries, walnuts.
late afternoon - sourdough toast with a banana.
Dinner- Broccoli minestrone soup.

Porridge, raisins, peanut butter.

Two fried eggs in a sandwich. Apple.

Dinner was lentil and vegetable "Bolognese" (celery, onions, carrots, red peppers) with rice, four chicken fingers and some cheese and crackers.

Had some nice meals over the last week.

Breakfasts:

●Banana and egg pancakes (no oats)
●Fried egg on toast
●Toast with honey
●Honey nut cornflakes with fruit

Lunches/Brunches:

●Omelette with cheese, onion, mushroom, ham
●Eggy wrap with cheese, onions, peppers, ham
●Teriyaki noodles with spring onion, pak choi, mushrooms, chickpeas and teriyaki sauce
●sourdough cheese, rocket and onion toastie
●crisp, ham and onion roll

Dinners

●Potato, chickpea and spinach curry
●Homemade naan with leftover curry
●Chicken, peppers, onion (fajita style) in a wrap
●Potato scallops with grilled chicken breast and some veg
●Lime, ginger, garlic & chilli Tuna steak with rice
●Halloumi and roasted veg tray bake.

Snacks/Drinks

●Tea, water, dairy milk, after eight, malted milk and custard cream biscuits.
●Usually 2 biscuits, and either 2 after eight or 2-4 squares of dairy milk, per day.

Also, 5 x 25g bags of crisps over the last week.

Prepare to be appalled Mumsnetters.

Two slices of brown seedy toast with butter and Nutella. Two flat whites. One glass of water. A piada with prosciutto and cream cheese.

Not a good day so far.

Will have a cup of tea this afternoon, ginger and lemon.

Tonight will have salmon en croute with broccoli.

And another glass of water.

That's it for the day.

I don't really have an exact recipe as such but this is how I made it - batch cooked in the slow cooker:

250g pearl barley, rinsed
1 can of black-eyed beans, rinsed
1 can of Mutti polpa
750mls stock
10mls olive oil
Seasoning - bay leaf, saffron, salt & pepper, 2 garlic cloves

Cooked on low for about four hours - made four portions so one for lunch, with halloumi fried in olive oil and a dollop of kimchi, and three for the freezer 😊

Usual porridge for breakfast
Lunch- soda bread, cheese, a pear
Dinner is Santa Fe chicken, brown rice and sprouts.
And it's Friday so I'm having a large amount of Asda exceptional sea salted crisps. They're very good.
