Aargh!

I was intending to eat better this year, and bought the stuff to do so, but I'm struggling to actually bother.

Dinner is usually fine, but I'm struggling with breakfast and lunch.

I'm not on a diet or anything; I would just like to eat more variety as I seem to always end up having bread lately, and it gets boring. Plus I'm constantly feeling bloated and lethargic.

It's homemade sourdough, so it could be worse, but I'm also shattered all the time, and had hoped that eating more variety would help with any physical symptoms.

I thought writing it all down here might encourage me to make more effort.

If anyone else wants to join me, that would be great 😊

I didn't start well this morning, hence this thread:

So far all I've had today is a cup of tea with oat milk and 1 thin slice of sourdough bread with butter and peanut butter

I’m following WW at the moment;
cheerios and skimmed milk
lunch was 3 ryvita, red pepper houmous and cucumber sticks and a bowl of Greek yogurt with raspberries and pomegranate.
dinner will be salmon & veg I think

plus a few cups of tea and probably an apple and banana later

Breakfast:toast and marmalade
lunch: tomato soup, slice of bread, some reduced fat crisps, yoghurt
dinner will be jacket potato, cheese and beans.

I’ve also had a biscuit.

Firstly ditch all the bread it makes you feel lethargic. I don’t usually have breakfast other than brunch at weekends. But I have salad, or ryvitas etc with humous cucumber toms for lunch with side of olives, homemade soups. Dinner is anything really just watch my portions but I like salmon with sticky rice and tenderstem broccoli

B: crunchy nut cornflakes and 2 cups of tea with milk.
Snack: large piece of shortbread, more tea, in a cafe.
L: ham salad sandwich, activia yoghurt, pear, banana, kombucha.
Dinner will be meatballs and spaghetti, I think.

I'll have at least 3 more cups of tea, I have a pint of squash on the go. There's a caramel egg with my name on it. And maybe a hot chocolate as I'm trying to drink more milk.

Other lunch things I have are homemade soup, oatcakes and houmous, crackers and cheese. I had a nice salad last week with leftover chicken, beetroot, lettuce, cucumber, tomatoes and houmous. If I have salad for lunch, it's usually worth random leftovers from the fridge.

Greek yogurt, blueberries and chopped nuts, cranberry and pumpkin flapjack (actually pumpkin vegetables, not seeds but very nice), cheese and tomato sandwich and clementine. Friends treating us to a meal out later, I might have the salad as really nice last time and I genuinely love salad!

We're away right now though, so if at home cake, lunch and dinner would be different.

I eat the same things every day always have since I was about 18.

Breakfast : Greek yogurt nuts and berries
coffee hour after breakfast
Range of supplements (vitamin, mineral and probiotics etc)
Lunch : 1 chicken breast, kale, spinach, broccoli, pine nuts and quinoa. Apple , banana and nuts.
Dinner : 2 salmon fillets, cucumber, tomato, carrot, soy sauce, sesame seeds, whole grain rice or quinoa, 1 poached egg. Greek yogurt pomegranate and chia seed pudding.

water to drink throughout the day. Peppermint tea before bed. I never deviate because of stomach issues and this diet keeps me feeling well.

Homemade granary bread with extra virgin olive oil and a bit of herby salt for breakfast

Chilli bean soup with avocado salsa for lunch
Followed by a single finger Twirl and a Rooibosh tea.

Dinner is chicken tikka masala ( healthy recipe from Diabetes UK website - I’m not diabetic but liked the look of it )
A bit of dark chocolate.

There may well be some snacks along the way…

I tend to eat twice a day. I've had a couple of cups of coffee, couple of pints of water, a slice of rye sourdough with half an avocado and smoked salmon, cucumber sticks, cherry tomatoes and a conference pear. I took that to work, it was easy to make first thing.

Dinner (after the gym) will be fried gnocchi, chicken breast, veg - haven't quite worked it out yet. If I'm hungry before the gym I'll have milk and a banana or make myself a milkshake if I can be bothered and depending on whether I'm starving or not.

I'm eating about 1400 calories a day as I'm trying to lose another half a stone. Sort of do intermittent fasting but not religiously.

2 coffees earlier and a tea, don’t eat breakfast as I feel it makes me hungrier. Just had lunch which was an omelette with feta & spinach, I have that several days a week but change the contents to use any veg that’s lying around the fridge, I will probably have a piece of fruit and some more tea and coffee and a chicken, veg, rice one pot thing for dinner.

Porridge with cinnamon, chopped pear and blueberries. Three mugs of instant coffee. One plain hobnob.

Two ibuprofen. Two Imodium. IBS probably triggered by yesterday’s conference pear, so today’s will only exacerbate it.

I made banana bread yesterday but can’t face it.

Breakfast: two eggs scrambled with baby spinach and ryvita with butter, grapes, coffee

Lunch: it’s sort of like a rice and spinach miso soup, like a congee, with coriander, chillies and some fermented veg, pomegranate and blueberry salad, might have a slice of leftover veg pizza in a bit

Dinner: will be roast pork with apple sauce, roast potatoes, roast carrots, french beans and peas, plus some red velvet cake for pudding

For breakfast and lunch, I tend to eat fairly similar things, rice or noodles with miso broth, lots of veg, boiled eggs, baked salmon, sweet potatoes with cottage cheese, various combinations of the above really with fruit and nuts.

Breakfast was homemade miso soup with spinach and tofu, with an onsen egg in it.

Lunch was a salad of romaine lettuce, cherry tomatoes and chargrilled chicken breast, with a dressing made from greek yogurt, olive oil and seasonings, sprinkled with mixed seeds and parmesan. I had two squares 70% dark chocolate after that.

Dinner will be homemade salmon burgers with salad and steamed veg.

I’ve had 2 small coffees and a cup of earl grey tea and some water.

I’m doing the 5:2 diet at the moment.

Breakfast - Greek yogurt, chia seeds and frozen blueberries

lunch will be: 4 wholemeal cracker breads with 2 laughing cow & cherry tomatoes plus half a carton of cully & sully chicken and veg soup. Plus an apple

dinner will be: steak, homemade onion gravy & broccoli/whatever other veg is in the fridge/freezer

snack: tea with collagen powder & a protein bar

I am on a diet and aim for 1400 calories per day

You’ve reminded me I like Laughing Cow cheese triangles and they’re good on crispbreads/crackers. I need to diet!

Today so far I’ve had two slices of wholemeal toast with the leftover remnants of some smoked salmon, a slice of cheese and tomato supermarket quiche (wasn’t that struck) and a slice of chocolate Swiss roll. I am a bit hungry again but don’t really fancy anything. Dinner tonight will be meatballs.

I had two slices of cheddar on toast for breakfast (Jason’s wholemeal sourdough, mmmmm) with some fig and balsamic chutney. There’s a chicken thigh in the slow cooker with lots of mixed veg, garlic, potato, smoked paprika for later. Probably have some skyr with cherries or blueberries, eventually.

Last week I moved back to England from a country that had utterly shit bacon and sausages, so I've had my 3rd cooked breakfast in 5 days with butchers bacon and sausages, eggs, tomatoes, mushrooms and toast....unfortunately I'm 100% not sick of it yet 😂

Will probably have soup and bread for early dinner and maybe some fruit this evening.

I made 2 portions of my lunch yesterday so that's what I had today with some bread:
"marry me chick peas" - as seen on instagram somewhere
tin of chick peas (drained)
half a jar of sundried tomatoes
tin of coconut milk
garlic clove
sweet smoked paprika
basil
blob of tomato paste
salt & pepper
something green (I had a sliced courgette and fistful of spinach)

Really hearty, filling, full of plant-based protein. I had some cheddar grated into it as I didn't have any parmesan at home.

Breakfast I'll often have a couple of boiled eggs and some toast. Or butter, marmite and banana on toast. Or porridge oats, honey and blueberries.

Loads of tea.

Last night had meatballs in passata with grated courgette and onion (with garlic. chilli, paprika, nutmeg, salt & pepper) on linguine with a salad.
Tonight I need to use up a load of milk so will probably do a macaroni cheese with a cauliflower & broccoli cheese, roasted vine tomatoes and bacon. Wouldn't usually do pasta with the cauliflower cheese but the cauli needs eating and my teen boys want and need to be carbo loading at the mo.

I do a lot of chillis, curries, stews - bung a load of stuff in one big pot. It's easier with teens who are always out at various sports and hobbies on those nights we eat in a couple of shifts!

Eating better to me always means more vegetables, more fibre, more protein, more colour. Any way of sneaking an extra portion of veg in. Frozen butternut squash in a slow cooked thai curry disintegrates into the sauce.

Soups! That way you're still having your hearty chunk of bread at lunch but with a warm bowl of vegetable goodness.

I’m vegetarian and trying to be vegan. Breakfast was half a bagel thin with avocado and mixed seeds. Lunch was chips and an alcohol free beer and dinner will be tacos with rice and beans and lots of salad and jalapeños

Lunch:
Homemade carrot and coriander soup
Homemade bran and wholemeal flatbread

Tea:
Smoked salmon and goats cheese pasta

Breakfast: Smoothie made of 2 bananas, half an avocado, oats, ground nuts and milk. Very filling.

I often make overnight oats for breakfast as the motivation to eat well tends to hit late evening…

lunch: Tuna pasta salad with sweetcorn and spring onion. Usually, if wfh, the slow cooker is my friend here.
