Please share what you have eaten for lunch today?

Looking for some inspiration and being nosey in equal measure.

Today, I've eaten 3 rice cakes with butter, cream cheese, lots of onion (red and brown), rocket and cucumber plus half a tin of M&S cream of tomato soup.

Would love to see what others have had. 🙏🏼

I've had a chicken, veg and cheese quesadilla, shared between 2 of us.

.The chicken was leftover from Sunday dinner. I've also made a soup using the carcass and juices, which had peppers, spicy marinade and onions in from roasting it. I added more peppers and will puree it after removing the chicken, which I'll debone and then shred and add back.
I'll serve it with some creme fraiche or a bit of grated cheese.
